Binging with Babish: Chilean Sea Bass from Jurassic Park

Fun fact: Chilean sea bass was nearly fished into extinction after its mere mention in Jurassic Park! That's actually not a very fun fact. That's kinda messed up. While still overfished, it can be acquired legally - while fetching a price of $30/lb. A delicious (and less expensive) alternative is black cod!

Ironic that a species of fish was almost hunted to extinction due to it's inclusion in a scene regarding people discussing the ethics of bringing extinct species back to life.

While Hammond wasn't necessarily 'kidding' when he said he spared no expense, he definitely wasn't being entirely truthful and thats kinda the point. Hammond spared a lot of expenses. Same thing as lobster. It used to be a low class food until some genius tricked people into thinking it's classy and special somehow. Now any dish with lobster in the name can be 25-50% more expensive for no reason. People think that it was a hidden gem that was underappreciated, in reality they're suckered by marketing to think so. It's still the same as it always was, low-mid tier seafood.

Hi banish! I love your videos! Have you tried something called the Girardet Method? I learned it from watching Frankie cooks and it’s an amazing way to cook Chilean sea bass. You make a bed of shallots for the fish to rest on, skin side up, in a cast iron pan. Fill the pan with a bottle of white wine until it covers the fish completely, except for the skin. Need the skin to be dry. And then you broil it at 550 for 6 minutes... if you haven’t tried this, you should because it’s delicious! And one of the best ways I’ve had fish!
