Realizing now that I forgot to try a pudding skin on camera - they're good! Texture is spot-on (lil creamy, lil chewy), and chocolate with just a whisper of coconut is pretty nice!

I can think of 3 uses for the Pudding Skins. 1. Perfect for a PB&J sandwich 2. A sub for cheese on a slice of warm apple pie. 3. Use it to help mold the perfect cookie and cupcake combo! (Maybe layer sandwiched between a cookie and cupcake as a bounding agent or just use it to top it!)

@@comradegarrett1202 What kind of monster puts cocoa into Pumpernickel??? That is just wrong. Traditionally, it is just rye berries. Today, maybe some molasses may be added and maybe some rye flour and sourdough starter. Maybe. But really, it should just be rye berries baked really slowly.

L Mister maybe he is like me and can’t stand traditional rye? We both hate cilantro? So maybe it translates somewhere to rye? Or maybe he’s just misinformed?

I think this is coming from a person who has only ever eaten rye bread and never baked with it. I'm not an expert either, but I've started to do a little bit of baking with rye, and here's what I do know: - "Pumpernickel" or "dark rye" flour is just the whole grain version (you probably knew that). It's not really that dark on its own. It looked like Babish was using dark rye in this video. - Traditional pumpernickel bread gets its color from being baked for a very long time in jars. The resulting texture is extremely dense and nothing like the sandwich pumpernickel most people know of. - If you're going to try to bake any kind of sandwich "pumpernickel" loaf, you're probably going to need to add some wheat flour and a darkening agent of some kind. Usually that's cocoa powder or molasses. Honestly, I would venture to guess that's what most deli breads use. Now, I will say that you might be able to get the colors right by doing just white rye and pumpernickel rye, but I doubt you could get the textures right.
