I actually had to hold my breathe when he carried that "three stack" of stock. "Make another trip!" I've worked in restaurants for a long time, and I've seen those sorts of accidents happen.

Whoaa crab / lobster bisque is my fave food by far and this method looks crazy. I’ve been following tommy bahama’s recipe for it but never thought to add rice to make it creamy ( or to make my own seafood stock from scratch lol). Also I’m so used to adding copious amounts of sherry wine, I’ll have to try it with white wine instead sometime!

@@squeektheweek6949 not really. I use a pressure cooker instead of boiling on the stovetop 😅. But the cooked meat dipped in soy sauce is great for idle munching. I like it for my late night study sessions

i would've taken that claw meat out right after it was baked and just used the shell in the stock, as the meat wouldn't contribute much flavor. in fact at the best place i've worked that served bisque, lobster in this case, they just used an abundance of shells for the stock.

If you pour anything out of the spout, you cannot pour at a rate that exceed the volume of the spout. It didn't pour well because there was stuff coming over the rims, not because the spout didn't work. Pour slower, no mess Counter-rant over.
