Having learned to make enchiladas from my grandmother who learned from her grandmother who grew up in Mexico, this is a pretty damn good enchilada recipe. My only problem is that she always said red sauce should only be used with beef, and that chicken enchiladas are much better with a tomatillo-based green sauce, with undipped tortillas because chicken and corn tortilla taste so good together you don't want to cover up the corn tortilla flavor by dipping it.

I'm mexican, and where I live, red enchiladas like these are as common as green enchiladas. In fact, the enchiladas sold by the majority of local restaurants are mainly done with red sauce. I think it strongly depends on the region where you order them.

Te quiero! We mostly make "foreign" food with what we have in the US, and we always try to push a dish to new heights, unbounded by tradition. I almost universally prefer the non-traditional version of dishes. I think our ancestors would have made it differently if they had then what we have now.

Unlike several dishes where you have to eat one whole dish in one sitting, Mexican cuisine makes individual servings per dish that invites you to eat as much as you'd like. Very optimal for meal preps!

@@erinb4237 Yeah I think they got the "suiza" part from the cheesee. In some places they are served in a chese sause similar to the one he makes in this video, but in most places that I've ordered "enchiladas suizas" they're just some random whatever sauce enchiladas with molten cheese on top
