I’ll never forget how the original Shrek was supposed to be used as a punishment for people at Dreamworks. If you messed up bad in some way you werewere put on the Shrek project. The one that would never be successful and was a waste of time. Now there’s tons of spin-offs and it’s one of their most successful movies

Yes! My family calls those pie crust trimmings "pie cookies". Little cinnamon sugar, quick run in the oven, bam. A delicious piece of childhood memories.

Fun Fact: The reason why Jack goes for the plums in the middle of the pie is because it's based on actual history. Thomas Horner (a steward to the abbot of Glastonbury) was sent with a Christmas pie to London to give to King Henry VIII, and the deeds for 12 manors were hidden inside of the pie.

Historical fun fact, but the original nursery rhyme that said “he stuck in his thumb and pulled out a plum,” likely was talking about what we would now call raisins or other dried fruit. Like English “plum pudding,” the word plum wouldn’t be applied to the fresh fruit we know today until a lot later

You are probably thinking of the little purple Italian plums that they make prunes from. Yeah, they are usually seasonal around late summer into early fall, depending upon where you live. They are small enough to half and put into a pie...and easily pull one out with your thumb. 👍

Since I believe rutabaga is what I call swede, it'd be a real TERRIBLE feat. Used to get swede mixed into our mashed potato when I was a kid and I HATED it. Wonder if it tastes any different after all this time. Not going to find out.

It's a massive nuisance. But on the bright side, we always have plenty of rhubarb for pies and even more to give away!

Tip: thicken with tapioca pearls instead of corn starch. No risk of getting that wonky corn starch taste when you use more to really make it set right.

My grandmother always used minute tapioca as the thickening agent for fruit pies. Works a lot better than corn starch.

You might get something less tart and also more blue if you incorporate a little bit of something alkaline like baking soda to the filling. The red pigment in a lot of fruit is a Ph indicator so it is red in an acid environment and gets bluer when basic.

You might've been able to get a vibrant purple if you used raisins or prunes, fun fact "Plum" back in the day of the Jack Horner nursery rhyme actually referred to any dried fruit.

As a tip if you don't want to flour your work surface, in fear of making your dough drier/tougher. Try putting the dough between two layers of plastic wrap and then rolling it out with a pin evenly. The plastic wrap comes out clean and the dough didn't get any extra flour that needs brushing off

I thought pie crusts were meant to be low hydration in the first place? If anything, a drier dough would be prefarable to a gummy, over-wet dough.

@@xiuxiu1108 it's a line between being able to work it and accidentally turning your dough too dry and crumbly to hold together. If your dough is just right (or don't want to flour it) then you can do as the original commenter said

Have you ever tried tapioca as a thickener in fruit pie over corn starch? It was the go-to thickener from both of my parents who were born in the great depression. They preferred it because it took less to thicken a pie than cornstarch. Maybe do a test of different thickening agents for giggles.

This is my go-to trick (that I learned from Alton Brown.) Tapioca flour is a great thickener. It also maintains its structure through hot and cold environments, meaning that you can freeze fillings ahead of time.

I recently picked up a pie crust recipe that I've been wanting to try making for myself. It's supposedly far easier to implement than this style of pie crust but having had it once, appears to produces equivalent results. A plum pie filling sounds delicious but leaving the skin on seems like it would introduce some weird textures. Apple and peach pies usually have the skins removed. I would try with both corn starch and tapioca thickening agent variants.

FUN FACT: The nursery rhyme about Jack Horner was about someone who was tasked to deliver a pie to a high ranking official. But...usually such pies hid something valuable. So, the deliverer stuck his thumb into the pie and pulled out a "plum"...which was actually the deed to a valuable estate. So, the deliverer pocketed the deed for himself and let's just say the high ranking official was none too happy about not getting anything. Given how Jack is depicted in this movie, I'd say that story tracks.

If I go the corn starch route I also add in some additional pectin to make it a thicker, jam-like consistency. Most of the time I use flour, which holds up better if you like your pies warm. Simply tossing your cut fruit in flour and layering it into the crust with a covering of sugar and some additional flour in between each layer. Sprinkle the juice over top, add on a few very thin slices of butter before topping the pie. Cloves go very nice with plum; if you add any spices do it in the layering process. The juice for any given pie should contrast the fruit being used. For sweet fruits like apples use lemon juice and for tart fruits like plums use orange. If the fruit has a lot of moisture to begin with, like cherries, skip the juice and add in some extra flour or other thickener.

Ever considered making the Krabby Newburg? The finest cuts of aged, imported kelp, stuff them with herbs from our garden, wrap them in parchment with our award-winning shallot tapenade, slow-roast them in our wood-fired, clay-filled oven, or kiva, and serve them with a garnish of wilted coral on a mahogany plank.

I heard that it may not have been a plum (fruit) that Jack Horner pulled out, but a plum (reward). Supposedly, a reference to Cardinal Wolsey.

I recommend, when kneading the pie dough, that you sort of fold it over itself instead of just randomly kneading it. That way you sorta laminate it and get an extra crispy pie crust.

I have made pie dough this way, but I get the best crust that I can make using frozen butter and my food processor. The results are worth having to clean the food processor bowl. The crimping looked particularly nice on this pie.👍

I concur. Frozen butter and then pop it into the food processor. Never touch the butter until the final knead/coming together for ultimate flakiness.

I read Lily hope one day you do like water for chocolate. So much of what's important in that film is the food. The food itself drives the motivation of many of the characters and is itself a character in the movie. I could see you bring that food to life

I believe corn starch loses its thickening ability when it drops below a certain temp. Fridging it and then re warming it would make it more soupy I think.

Since you mentioned pizza pies, I suggest Alvin tries making Peppino's pizza from Pizza Tower next time he's on the channel. It's just a regular pizza though, with mushrooms, tomatoes, sausage, extra cheese and pineapple.

Movie has a special place spot for me. Took my aunt and and uncle's 5 year old godson to go see it. They tagged along.The kid really looks up to me, and I dont think he's ever really been to the movie theater before. Went to play video games at the arcade after. Kid freaking robbed me of my money, but I didnt mind.
