For anyone else that runs into the same problem of not having a small enough funnel for transferring into small containers such as squeeze bottles, "Ziplock" type sandwich bags make a great substitute to piping bags that may be to large for such a smaller task. I personally use this method of transferring between sourcream tubs and condiment squeeze bottles.

Back in the fifties when I was a kid, my mom would make a steak for my father and after the steak was browned in the pan we pour in some beef broth and make a very thin au jus. She poured this over the steak in his on his plate and he would eat it with a piece of bread. This sloppy steak worked back that memory

For anyone with a seafood allergy, be aware that bonito flakes are dried, shredded fish related to tuna and mackerel. It is commonly found in stocks, as a topper on it's own and in fruikake seasoning. For a vegan Dashi, substitute sun dried daikon shreds. Adding some dried shitake stems can add a bit more meatiness and using the water drained from a pack of konyaku cake or Shiritaki noodles can add a bit of a fishy smell.

Tip: If you don't have a funnel small enough, put your wasabi mixture into a parchment cone, rather like frosting or icing, instead of a squeeze bottle. If you're determined to put it into a squeeze bottle, it would still be less messy to use the parchment cone and "pipe" the wasabi into the bottle.

4:16 Trick for next time: instead of trying to pour the wasabi paste into the tiny bottle, squeeze the bottle first, dunk it into the bowl of paste, and then un-squeeze. The paste will get "vacuumed" up into the bottle. I use this trick for preparing tiny sauces for bentos. :)

I know you will never see this, but PARCHMENT PAPER CONE! If you don't have a small funnel use parchment paper (google how to do it, it's usually used for piping icing on baked goods). Makes transferring sticky foodstuffs so much more manageable.

Dude, I honestly think this is the closest you've ever come to a genuine, Michelin star plate. That steak looked like something you'd get at Cut if Wolfgang Puck REALLY took a liking to you. # Can KZbin channels get Michelin stars..?

Black garlic isn't fermented. It's aged in a warm environment where the sugars slowly caramelize over the course of like a month. But it's kept too hot for bacteria or funk to set in.

Kitchen hack here: If you don't have a funnel that is small enough, fill the thing into a ziplock bag and snip of the teeniest edge - instant mini pastry bag that can be used for everything that does not stick to plastic because of static.

Have trouble putting sauces into small containers? The Mexican salsa trick is here to save you!! Pour the sauce on a smallish ziploc bag, squeeze out the air, seal it, cut a tiny corner off and BOOM (:

Should have spooned the Wasabi into a ziplock bag, squeeze it into the corner, then cut the tip of the corner off so you could squirt it into the bottle.
