Sure he massacred Shosanna's family right in front of her, but hey, guy knows not-so-terrible strudel when he sees it. Follow along this week as we make old-school Viennese apfelstrudel, and don't forget the cream.

RECIPE
Ingredients
1 1/2 cups bread flour (plus more for dusting, sprinkling, filling)
4 tbsp vegetable oil
2 egg whites
1/2 tsp salt
1/2 tbsp lemon juice
1/4 cup warm water (110F)
4 baking apples, peeled and sliced thinly
1/2 cup sugar
Zest of one lemon
1/2 cup raisins
1 tbsp cinnamon
1/2 cup finely chopped walnuts, hazelnuts, or almonds
1 stick butter, melted, plus more as needed
1 egg, beaten
1 cup heavy cream
1 tbsp sugar
Powdered sugar for garnish
Place flour in a large bowl - create a well in the center with your fingers, and fill with vegetable oil, egg whites, salt, and lemon juice. Mix with fingers until just combined, and sprinkle with water. Knead until a sticky dough forms. Turn out onto a lightly floured tabletop, and knead rigorously (slap onto the table about 100 times), until the dough is soft and supple. Place in a lightly oiled bowl and let rest for 30 minutes.
Combine apples, sugar, lemon zest, raisins, and cinnamon. Set aside and let liquid weep from apples.
Cover a large table with a cotton tablecloth, and liberally dust with flour. Roll out dough on tablecloth until about 24" in diameter, and using floured fists, stretch dough out as large as possible without tearing. Back on the tablecloth, gently tug at edges of dough until it's a rectangle thin enough to see the pattern of the tablecloth underneath. Trim off torn/thick edges. Drizzle with melted butter, and brush until evenly coated. Sprinkle with chopped nuts.
Place about 3/4 of apple mixture on one side of the dough rectangle, and using the tablecloth, roll the apples over onto the dough square. Brush the newly-exposed dough covering the apples with melted butter. Roll apples over again, and repeat, until apples are at the center of a long, closed roll. Pinch ends together to seal contents inside, and place seam-side down on a parchment-lined baking sheet. Brush liberally with a beaten egg.
Bake for about an hour, basting with melted butter every 10-15 minutes, as soon as the crust begins to look dry. Remove from oven when golden brown. Allow to cool at least one hour before slicing, dusting with powdered sugar, and serving.
In a small bowl, combine cream and sugar. Beat to stiff peaks, and pipe into a bowl, served alongside strudel.

To whom it may concern, The reason for the air gap is not from the tightness of the dough. Its is actually because you used raw apples. When raw apples are used in a baking dish like pie or strudel they shrink to almost nothing. Instead, precook your apples by gently heating them in a dutch oven. You can use a skillet but be careful as it can easily overcook your apples. The key is to keep your apples below 140 degrees (fahrenheit). Hopefully this helps :)

That scene made me research and respect Christoph Waltz. That dude is legit fluent in German, English, Italian, and French. He inspired me to learn languages. I bet that guy can speak Spanish as well from living in Los Angeles.

Eddy Yaeji Germany, Switzerland and Austria all have to learn French at school. In Switzerland it’s even mandatory (as is English). He had a good French accent. (not too germany or austrian) depending where he grew up, Italian could also be a taught language (in the south west ppl mostly speak both; the Tirol)

Interesting fact: during the WWII Deutschland was in high deficit of dairy (especially butter), so a lot of strudels were made of animal fat (usually pork fat), so eating this kind of dish is not kosher. There is no doubt, Landa knew everything about her biography, so he deliberately forced her to eat animal based fat with cream (dairy). But still a great and delicious looking recipe, much appreciate!

Watching this years later, it's kind of amazing seeing the difference between this and your later episodes. Not only in video and audio quality, which come mainly from technical improvements (but also increased confidence and technique on your part I'm sure), but also the difference in how you make the dishes. More confident, more complex, and more clear on how you are doing things even when they're difficult.

To everyone who says that He knew She was Jewish because the strudel wasn't kosher- shoshana wasn't religious and even if she was, there's a term in Hebrew called 'Pikuakh nefesh'. I dont know how to translate it but it means that if a jew is going to die because he kept the rules of the Torah then he shouldn't keep them because life is more important than the Torah. That's why it was aloud for shoshana to eat non kosher because had she not, the nazis may have figured out she was Jewish which would have put her at death risk and there isn't a rabbi in the world who would tell her to not eat the non kosher food in that situation.

Bruce Wayne not all of them. Christianity basically says that if you don’t follow the rules you will suffer eternally, even if it was for the preservation of life. Also, they actively denounce suicide and all who attempt it. After learning this, I immediately denounced my Christian upbringing.

to me it was the sound of the spoon scraping the porcelain. That whole scene sets my teeth on edge cause the foley artist seems to think no-one can eat without scratching their dishes.

Landa knows that it's Shoshana the entire time, hence why he orders her a glass of milk and makes her eat the cream. We all remember what happened to her family in the opening scene on the dairy farm. She probably can't stand the sight of anything dairy... Such an AMAZING movie and a masterclass by Waltz!!!!!!

Fun fact: Traditionally Strudel is made with pork fat - which isn't kosher. In regards to the movie, and the restaurant scene in particular, most people notice the fact that Hans orders milk (Shosanna's parents/shelters were dairy farmers), but in my experience, a lot of people misses the meaning of ordering the Strudel in the first place, seeing that Shosanna is in fact Jewish, thus not 'allowed' to eat non kosher meat, or animal products (please correct me if I'm wrong; I'm quite ignorant about the religion to be fair). I think Hans, at the point of the restaurant scene, knew that Shosanna was a Jew - perhaps even that particular girl who ran from the farmer house, although that would be impressive recognition. Regardless, Quentin Tarantino is a fucking genius, and Christoph Waltz plays that role to pure perfection and beyond. 11/10 would watch again, even though I've already seen it 10+ times.

Rasmus Eskesen you can't eat blood fat or anything like that. Also some meats are just out of the question. You also aren't allowed to eat dairy with meat, the strictness of this depends on your sect of Judaism (some say only not beef with milk, but something that doesn't have milk like chicken would be fine for instance). Not Jewish but tried to eat like one for a while

Wow. I love your channel, its just so simple, honest and the humor of it its amazing. I grew up learning how to do strudel with my grandma and my mom... and wow its different from how we make it. Love to be exposed to different things. we use vinegar in the dough for flexibility and strech. we use cream and filling all over the dough and then roll it up. (so its flaky yummy dough and filling in a roll. not all the filling in the center and then layers of dough) Due to this, our apple slices are not so thin so they wont melt completly when baked.

Anyways in that point in time most things were done with lard, pork being popular (or at least in my country, note that I’m not French, German or Austrian) so yeah, if she had refused knowing the fat content probably was pork, she would have signaled it out. It's not uncommon for Reenactors to go have a bite somewhere after an Event before everyone parts way and go home ( or in the middle of an Event for lunch when you're bored of canned food ) , but unless you're a bloody moron , you take off any piece of equipment that has some ostensible swastikas on them . And you fucking behave in public spaces . People will look at you with curiosity but you shouldn't have any issues . Our group never had issues , and we live in a country that was under the Occupation , so laws are stricter regarding Reenactment and displays of German memorabilia .

We usually make strudel with apple-cottage cheese filling in slovenia, which also contains sugar, some breadcrumbs, sour cream, cinnamon and as my grandma always makes it an egg yolk and a whipped egg white, and she makes the best strudel (I also insist on using an egg, I even force my mom to do it, when she makes it, because mom's side of the family never did that and she wasn't use to it)

New to your channel 18.10.2021, I like your new way of recreating food dishes from Films/TV, this one I had to comment on, I love Inglorious Basterds since I first saw it, easily I can watch it over & over again… this scene is perfect the way it begins, Shoshana in absolute terror of Landa,, the build up to the dish & the anticipation for the creme to arrive is movie & gastronomically magnifique!
