I just realized that tomatoe confit is essentially my grandma's pasta sauce. She would blanch the tomatoes first then roast them with garlic, onions and lots of herbs. Once roasted she then then pureed them until smooth and finally canned them. Still my favorite pasta sauce recipe.

He didn't actually make tomato confit, though, he roasted his tomatoes. To confit them, they should be basically submerged in oil and cooked at a low temp for a long time. It's effectively sous vide but with oil.

@@hartd92 ye i kinda stood in shock that he would use so little oil for a confit, then when i saw the results i was just like "mate you just roasted those", speaking off. pretty sure the skins would have basically all fallen off so you could have taken them after the oven roast which would have made you have dehydrated roasted tomato skins for your dorito powder

If I'm not mistaken, the main difference between a doughnut and a bagel is that doughnuts are fried in oil, and bagels are boiled in water and then baked. The dough ingredients would also be different, though I'm not sure on the specifics.

I have a slight problem with the characterization of the tomato cooking. Those are some AWESOME roasted tomatoes... but they are not Confy. To Confy something one completely submerges it either in melted fat or sugar syrup. Babbish juts sprinkled them in some olive oil.
