Quick question. Why do you use plastic instead of wood boards? My understanding is that plastic, while great for raw protiens, degrades the knifes much more quickly, requiring more frequent sharpening (not honing; I imagine you do that every time.) Thanks for these videos, this is great for an intermediate chef too, and serves as good intel for me to pass to new folks!
@HeadlessChickenTO6 жыл бұрын
A number of years ago, at least here in Canada, wood was banned from commercial kitchen use because it absorbs liquids like meat juices. Plus they get dented and damaged easier that causes grooves that are harder to wash where bad little microbes can do the nasty. Plastic is supposedly more sanitary.

Plastic is not good for earth. Period. Anyway wooden block is easy to clean just salt and lime, rub it, rinse with water, done.
@martinerhard84475 жыл бұрын
@@HeadlessChickenTO The funny thing is that studies showed that the exact opposite is true. Both wood and plastic boards have to be soft enough to get grooves, if they are too hard they will blunt your knifes (that's also why one should avoid hard bamboo cutting boards or much worse glass or stone ugh..) And of course on board boards bacteria can nest, but most wood cutting boards contain natural bakterizidal components. That's why studies found less bacteria on wood boards after washing
@zdenek30105 жыл бұрын
@@martinerhard8447 Not only wood is soft but cutting boards are usually made the way that wood fibres point vertically and knife slices between them so they don't destroy the edge so quickly and also they can push back into their previous position making grooves go away. It's basically like cutting brush between bristles.

Ideally you want an end grain wooden cutting board. They are more sanitary and will help your knives last longer. Plus once it gets too scratched up and beat to hell to use you can just sand it down to a nice fresh surface and refinish with some mineral oil and it's just like new. A good quality butcher block cutting board will last you a lifetime with proper care.

samdajellybeenie I have some of those too! I got 6, 8 and 10 inch chef knives, a 8 inch cleaver, a 5 inch deboneing knife, and a 5 inch utility knife. And they all cost between $30-50 and have lasted me 4 years so far. And the fibrox handle is so nice, it may look ugly but its a lot grippyer than wood. Victorinox is a great choice imo.

+1 for the Fibrox! Great starting knife before moving into more expensive forged ones. Personally I use a set of stamped Henkels!

As someone from Solingen I have never had problems with my knives. I think we still have some that my grandmother used. Just investing in a few good ones can give you joy for the rest of your life.

Also worth noting that Victorinox paring knifes cost basically nothing and are sharp enough to cut paper, they're an incredible value.

Oh god, how awesome would it be for Anthony Bourdain to be a guest on this show? I know he's probaby busy eating his way through southwest China (or something), but still...

I have never been a great cook. I've never felt even remotely comfortable in the kitchen. Now that I'm older, I'm starting to get a love for cooking, and your channel helped inspire me to become a bit more comfortable in the kitchen. Thank you.

Thank you for this. I know how to cook, but its always been home cooking. Its really nice and tastes good, but I never feel like I'm doing anything special. Hearty, sticks to your ribs kind of meals are always appealing growing up on the farm, but even in cooking classes through highschool I never got the feeling that we were learning anything different. I will be sure to subscribe now more than ever so that I can keep up with these. again, thank you.

My counter can support a giant cutting board like that, but my sink can't. Do you have tips for keeping a cutting board clean with a sink too small to fit a stock pot?
@gfisch727 жыл бұрын
Clean it in the shower
@misssabina2357 жыл бұрын
Kylie Perry use hot soapy water and a dishtowel and then bleach down or use vinegar in a spray bottle if you don't like chemicals.
@PeaceKeepingMissile7 жыл бұрын
Well for small cutting boards just take a wet piece of paper towel and place it under the board for instant stabilization.
@SanaSamaha7 жыл бұрын
Use another container of water (or detachable facet if you have one) to carefully rinse the cutting board while holding it over the sink. Soap up the surface with sponge or towel.
@TheBubyChris7 жыл бұрын
Seth Greschuk While that does work for sure it is also very unsanitary. Depending on the task you are performing, like say trimming a chicken, there could be juices and such that are full of bacteria. The paper towel will hold those things and help aid in the spread of bacteria. This is why it is a violation of health code in every city and county in this the US.

Finally got around to checking out the equipment list on the website because I'm in need of a new cutting board and I love that you included both affiliate and non-affiliate links to places where all the stuff can be purchased. Of course I'm going to use the affiliate ones, but by providing both, it really does show that it's stuff you genuinely like to use and aren't just recommending it to make money from it. Keeping it classy, like always!
