For the dredging station, there is a rule for seasoning the flour. Unless the flour is visibly a different color (not necessarily dark, just visibly not pure white, maybe slightly orange), you haven't done anything for the flavor.

Today’s the 1st time in my 42 years that I realizes Ralphie screamed when the duck’s head got cut off too. His brother even looked at him surprised but stayed in character though 😂. I know the mother wasn’t informed to get her reaction but I guess they didn’t tell the kids either.

A reminder that while temperature is important in candy making, it is specifically based on the temperature of boiling water which varies based on altitude. Learn from my flub and always test before you follow a recipe and adjust accordingly.

I was surprised how much of an effect this had when I first measured it. Water boils about 10F lower here where I live roughly 5500-6000ft, almost 5% lower temp than sea level.

table tempering chocolate is so much easier and faster. 45 minutes! No way, tabling takes like 5 min. You can feel the moment it goes into temper so you don't need to worry about temps. I watched the candy makers at Hercules Candy (KZbin) temper using their technique which is similar except they use their hands to move the chocolate.

the ice bath works on all leafy greens but it's pretty much just aesthetics

@@jedimomma the softer the leaf, the less recovery, from my experience... it could also be i just dont like softer leaves. If i really want greens but im out of fresh leaves i sometimes fry celery with fajita spice mix and garlic. something about garlic heavily reduces the sharp flavors from celery, reducing it to an almost citrusy flavor.
