Really great video! To me though it feels like a shame when restaurants use Wagyu for a burger since a lot of it's appeal is in the structure of the meat itself which is lost in grinding. It has the same energy as putting gold leaf on a milkshake lol.

With super fatty ground beef one trick is to borrow from meatloaf a bit and put an egg into the ground beef to help bind it.

I don't understand wagyu burgers. The main thing about wagyu is the marbling, which doesn't matter when grinding up the meat. Making this a very expensive, hardly better than basic ground beef, burger.

Here's one to try out: The 60/40 Burger from The Red Cow in the Twin Cities in Minnesota. The patty is 60% ground beef, 40% ground bacon, topped with sharp cheddar and candied bacon strips served on a toasted bun with honey Dijon mustard.

For anyone who wants ground wagyu without spending huge amounts of money- 70-75% ground beef will give you a near identical result.

I kinda want a Scraps & Sides series, where Alvin, Kendall, and Babish if he can, use up the leftovers, screwups, and failed bits from other recipes. Kinda like the little extra recipes Alvin does in the middle of making a main episode; but a whole studio thing. I imagine the fridges and freezers would hold some magic.

Only problem with waygu unless you blend it with another type of beef the burger would lose half of it's mass.

Ground Wagyu is showing up more in the grocery stores these days, I might be able to afford to make one of these for myself! Fascinating to see the reference burger at the end, especially the extra thick bacon aspect. Not sure if I'm ready to smoke and cure my own pork belly into thick glazed bacon, but amazing to see!

We've been making wagyu cheeseburgers every week or so for a year now, and we've tried our own grinding of different steaks, but we prefer the ground beef straight from the local wagyu farm. It breaks apart less. Know your farmer :)

Look, I'm not questioning that those burgers are tasty, that's a given. However, a $70 burger is pompous and is 100% due to the overprice of Wagyu. If Wagyu didn't have its famous name, that burger is a fairly basic cheeseburger. Even that whatever named sauce isn't any more complex than McDonald's. I've not yet tried Wagyu myself to judge its taste compared to any other beef, but there is no normal burger that is worth $70. There is no way Wagyu is that much better than any other beef (and, correct me if I'm wrong, but doesn't grinding it negate its value?) to be worth the price. This burger is being sold on its namesake more than its actual taste. Without the Wagyu name, there's absolutely nothing special about that burger. At least not $70 special.

As a burger lover, I think 2 patties is over the top, one patty that big should be the sweet spot for this burger, but it looks GREAT!

So I have a question that is off topic. How would you define sausage? I would define it as ground or finely choped meat, or veggies for our vegan friends, that is smoked,cured or otherwise cooked with aromatic spices with or without a casing. This definition would include Italian, polish, gyos, and falafel in my mind.

I would highly reccommend, next time you want sweet bacon, to instead coat the bacon liberally with brown sugar and black pepper before baking off in a 425 degree oven. or, if you want some extra kick, you can sub the black pepper with cayenne.
