I dont get why people think the word digestive is such a bad thing? It doesn't just describe the end result. Digestive also refers to the beginning process (putting food in to your mouth) which is a pleasurable thing isn't it? And its not like they are called 'shit cookies' or 'turd biscuits' is it? They don't contain fecal matter. They are calked digestive biscuits for a reason. That readon being that they were thought to be beneficial to digestion. They were then, after a few years when science had advanced, thought not to be as good as at first they were thought to be. They kept the name, in Britain at least. The name seemed to put America as a whole off of the product, so they decided not to keep them. Their loss. They have had nearly 100 years without the deliciousness of digestives, but now you see hundreds of KZbin videos where Americans are mullering the shit out of chocolate digestives and raving over how good they are! So maybe a bit of a comeback is happening? America. A country that bowked at the idea of a biscuit/cookie called a digestive, but then would quite happily eat something called 'shit on a shingle' and Hersheys chocolate, that contains a component also found in vomit, aswell as paraffin, as ut helps to keep the chocolate from melting in hotter weather. As my old Grandma' used to say "Get it eaten. It all goes to form a turd!".

The Banoffee Pie in my local bakery when I was living in Brisbane places the bananas on the bottom and the toffee on top and then the whipped cream. They also added Macadamia nuts to the pastry base - but left them in chunks. If you are allergic to bananas (and I believe you when you said you were) I have found this dish is nice if you replace the bananas with white flesh peaches.

It's always great to see Banoffee Pie get international attention. I used to work in the restaurant where it was invented and it still gives me a sense of pride when I see it in the wild. There's one or two things about the way you made yours, though. Of course your own version is yours to do what you want with, but if you're going for the traditional one you wouldn't use a biscuit base. You have more control if you're making the digestives yourself, but they tend to be too sweet. In The Hungry Monk, they were evangelical about using a shortcrust pastry. You should also whip coffee into the cream (I hate coffee so I never do). I don't want to be one of those people who say it's not x dish if you don't do it exactly in y way. Buuuuuut, if you want to try it the traditional way, you might want to do those things slightly differently.

I made the *dulce de leche* after consulting this video again and it is amazing! I took the labels off the cans, filled the big pot so that the water was an inch above the can tops. Let it come to a boil and then lowered it to simmer with the top on for 2 hours, 15 minutes. THEN, since it was late at night, I cut the heat, removed it from the burner (top on) and just left the cans there to naturally cool over night. In the morning, the water was slightly below room temperature (not yet cool). I sprayed a tiny bit of Avocado Oil in a mason jar and put all that deliciousness inside. As a snack, we bought some cheesecake filling and cool whip. Add about two tablespoons of each to a bowl, then add a tablespoon of the dulce de leche and mix it up. Eat it as a dessert dip using graham crackers. SO GOOD!!! Thank you Babish!!! 🤗🤗🤗
