that short statement from sohla at the end really hit me, i cried a little. it truly was a weird year for all of us, but she was put in a really rough spot due to BA. her finding new work with babish and having fun while being respected as a person is beautiful and she deserves it. truly one of the best comeback stories.

I just want to put out there THIS is exactly how you do genuine and authentic content, everybody in the video, the camera person, the helpers, the audio editor, the editor and the personalities on screen all look as though they are having so much fun and enjoying every second of the process in making this video. This is the content I miss from BA, and this is a clear example of what so many cooking shows or even just shows in general can learn in how to create relatable authentic content!! I feel like her personality shines here in a way that it never did at BA. She always seemed uncomfortable at BA and they always underutilized her and took her for granted so much. She has so much knowledge, creativity, and talent to share and they used her as a prop and assistant. So glad she left BA.

I usually don’t like turkey, but pan fried and butter basted before roasting sounds pretty good.

Some day you need to buy a turkey breast or, even better a thigh, and bread and shallow fry it. Or you can fry it in an oven safe pan and finish it off in the oven. It will change your opinion of turkey for ever. People who don't like turkey, probably don't like the flavor profile of the poultry seasoning mixed with the taste of roasted turkey. I'm not much of a fan myself. Cooked the way I described above is heavenly though. Totally different than that tired old Thanksgiving bird we all grew up eating.

The whole concept of this show is so wonderfully wholesome, and I’m so happy for all the positivity flowing to Sohla. BA specifically undervalued Sohlas character and talent, so Babish went ahead and made an entire show just about appreciating and displaying her character and talent - it’s both such a wonderful comeback at those bastards and a truly earned respite for Sohla. All power to you, Sohla. Looking forward to all the future content, more wonderful creations - and the book too!

Also, I wish you guys had tried to rehydrate the freeze-dried food. Astronauts' food is only freeze-dried because the water inside is heavy and therefore expensive to get into space. On orbit they heat and rehydrate their food by connecting the packet to a hot water tube in the ISS's "galley."

@@boazchapman2353 Bon Appetit, the channel Sohla was at before it came out that most/all of the non-white personalities weren't getting paid as much as they should've been (or possibly not getting paid at all). They're trying to rebrand themselves, but so far a lot of the old fans aren't too happy with how different the videos feel and how they're still keeping quiet on how they've changed aside from hiring a lot of new POC people.

They're trying to "make up for it" by hiring celebrity chefs, rather than hiring and paying Test Kitchen chefs what they deserve. There's a chemistry, which Sohla and Andrew have in abundance that's lost. Marcus Samuelsson is a good hire, but make him the Editor in Chief and have Brad and Chris and Gabby attend weekly cadence meetings with him off camera, and he shows up at random to sow chaos.

This might be a little weird, but I vividly recall reading some pretty reprehensible comments on Sohla's videos on BA regarding her ethnicity, her looks and her dishes. I get that the internet allows the trolls to anonymously fling poo from the safety of their their homes, but I wanted to point out an observation nonetheless. Sohla is a wonderful and calming creature to watch, her culinary skills continue to amaze me and I would put this Thanksgiving day spread up against any that might show up on any of our tables this holiday season. Sohla represents everything I want in a fellow American and I'm so happy that Andrew saw what he did in her and brought her aboard BCU. They seem to have a great friendship and we get to be the beneficiaries of their partnership. I'm thankful for much in my life this year, but I'm also thankful that this happened. Happy holidays and rest a little easier knowing that 2021 has real potential to be a great year.

@@ron8162 Sohla was a highly popular member of Bon Appetit's video creators who was not only underutilized and forced to be in videos in a supporting role but was also a victim of the corporate systematic racism from Bon Appetit where she and other ethnic minority staff member were never paid or compensated for any video appearances despite being in a substantial amount of videos and doing PR with the cast. After she left the company amid their revealed scandals, Andrew signed her up for a Saturday series.

@@ron8162 She used to be on the Bon Appetit channel, which if you missed out on all the drama with them, turns out they were severely underpaying their POC cast members, especially Sohla, who even with her 15+ year restaraunt work experienc was paid less than the other members After leaving Bon Appetit, she's been featuring on a lot of different channels as a prominent chef and not just a random background character As far as Babish's channel, he changed from Binging with Babish to BCU to imply he's adding other new members. I believe as of now she has signed on for 12 or so episodes here, might be more in the future

The BA comment section could get really nasty about cast members (see Priya), it almost felt cliquey at times. Although it seemed like some Babish viewers were wary about the addition and how it would affect the channel, Sohla seems to have proven herself and I’m so happy to see her thrive in such a wholesome environment!

It depends on how you're going to use the mushrooms, because they're being cooked fully through and going into a casserole, it doesn't matter if they get washed. If you're steeping them for flavour, par cooking, w.e else, then it might be different.

Me mom's advice: if you're going to make soup or a casserole, wash them away. If you're going to fry them or put them into pastries, don't. They suck up so much water and then when cooked they release it all, it may change the flavour or the consistency you want. Better ask a chef lol.

Sohla you have brought so many people so much joy this year. I'd never watched any of your videos before the pandemic, but that's how I spent April. I spent summer boycotting certain publishers and really missed you. I was SO HAPPY to see you find a new place that appreciates you. I learn so much from your videos (even though I don't eat meat) and especially love your off-script series. Congratulations on your book deal!! If you open up another restaurant someday I will make a special effort to visit. This was such a fun episode especially the last few minutes. Take care
