So you guys mighta noticed that I renamed this episode "Healthier Versions of Unhealthy Foods" - I wanted to make it clearer that these aren't diet foods or things you should necessarily eat every day, they're lower-calorie, lower-carb, higher-fiber versions of unhealthy foods. They're still very high in fat, so there's a trade-off, but they hopefully give you guys ideas of how to scratch the junk-food-itch when you're trying to eat well!

My father can’t eat rice anymore (due to health concerns), so I’m going to start using cauliflower for a better substitute. He will surely appreciate having a great not-rice with beef stir-fry. I switched my diet around, I started biking everyday morning and afternoon, and started to drink water like I had an addiction. And it worked after a month of excruciating cravings, I succeeded. I went from 211 pounds to 185, the skinniest I have been in years. This is because of you. Your videos helped me push through my cloudy head about changing myself. I hated cauliflower as a kid but I guess that was more because of the cooking skills of my parents. Andrew, I'd recommend straining the cooked cauliflower through a cheese cloth rather than letting paper towels passively soak up the moisture. You will be surprised at the waterfall of liquid that will come out and your end crust will be much sturdier.

You need the cheese, fat is one of the main carriers of flavor, either your using Fat, Starches, Sugar or Protein. If you didn't have any fats it would taste bland.

Babish, you have truly inspired me to start cooking my meals in the most healthy and knowledgeable way possible. My fiance is having very bad problems with her kidneys and ureters that limit her protein intake. (To much protein makes her sick as her body cannot process it all correctly). Your videos and knowledge of cooking makes me strive to cook in the smartest way I can and to stay away from overly processed foods. Being the person I am I would have never thought I'd take so much joy from cooking a great healthy meal. We enjoy watching you cook and the happiness it brings you. stefimon You’d have to define “health,” but as most people see it, it would indeed be “healthier” as empty carbohydrates are swapped for fiber and addition micronutrients. And Parmesan cheese is one of the “healthier” cheeses, as it has around 10 grams of protein per serving and fewer grams of fat than most cheeses.

@@NotKimiRaikkonen I get that Keto is the new trend that everyone is hung up on, but I've never seen someone who's gotten fat from rice. If you look at Latin America or Asian cultures where rice is a BIG part of cuisine due to rampant poverty, these guys ain't fat. Pasta I get, rice does not make any sense. (And I'm not even sure if you can eat cauliflower on Keto, correct me if I'm wrong)

you can puree cauliflower with salt and garlic to simulate alfredo sauce. My family tried this a few times just for kicks and giggles and it was fantastically satisfying. 10/10 would recommend

You would add the same amount to a regular mac and cheese tho. And since you're replacing the maccaroni with cauliflower, you still end up with more micro nutrients and way fewer carbs and therefore calories. Also, there are a bunch of high fat diets that are proven to be quite healthy, so "it's still so high in fat" isn't really an applicable argument for every person on a diet.

Fats arnt bad. Fats have a low insulin spike and good quality products like grass feed versions pack alot of good fats and vitamins. The issue the world has with cheese is usually the othe! metric tone of carbs served with it

Thank you very much for the Fried Rice recipe! I used shrimp instead of ham and used garlic and ginger instead of oyster sauce and it turned out great. I've known about riced cauliflower all this time and never would have thought this substitution would work so well. Thanks again!

Ohh I got excited when you started using cauliflower, I’m gluten free due to allergies so I love when there is more awareness for others to see that we can make swaps of foods otherwise we are unable to eat! However, none of these dishes were healthy. When I share my recipe videos, I actually make them without oil and find substitutes that are allergen free and healthy❤️ if you’re interested, hope you like my recipes.

You know, you can really make 99% of your recipes healthy if you cut back on the cooking oils and butter. Those are what typically jack up the calories of restaurant dishes.
