the first recipe where you added lemon in rice is not strange. we South Indians have a dish called "lemon rice" where we pretty much add lemon and spices like muatard, pulses and green chili and lemon juice into it. it's a wonderful dish trust me. we even make "tamarind rice" by adding tamarind juice into rice

Much healthier too, especially if you have health conditions like diabetes (doesn’t make your levels skyrocket). Rice doesn't REALLY need it. asian cooking tends to use a lot of salty ingredients. soy, fish sauce etc. And if you throw that in the water it will be wasted. If you aren't using any of those then yeah, I'd throw salt on the water too

For the avgolemono: Try whisking the egg whites first (make frothy) then add the yokes. It will be an airier soup. Also try adding lemon zest and a bit of ginger for extra goodness (and of course freshly ground pepper).

7:02 instead of doing that, you have to sprout the brown rice for 2 or 3 days, dry the grains, toast them and then you can make the powder

I've never gotten decent rice from a rice cooker. Sticky, gooey, gloopy mess. I now just boil rice like I boil eggs. Lots of water, test for doneness, then drain like pasta. Perfect every time.

Here in Greece "avgolemono" is only the last step of this soup(avgo=egg, lemono=lemon). Also this soup is what we call traditional chicken soup. Avgolemono is a something that we do in other foods too, especially stews. In general, in Greece we put lemon everywhere!

i had to laugh when he tried to pronounce avgolemono - he actually got it on the last try lol you just put the emphasis on the LE - avgoLEmono. there are so many different versions, but it's just the best soup ever

Cooking your rice in stock instead of just water is also a game changer! same goes for couscous, I add stock cubes to the boiling water and let it dissolve before adding the rice.

I have been baking rice for 25 years now ... it is the easiest and most consistent way. Takes longer, but you just start it before everyone else.
