I've been making this for years and the key is the addition of some of the pasta-water back to the pan when you butter the noodles. Like the gentleman says, it makes it more like a sauce than just noodles soaked in butter. It's smoother, richer and creamier.

Untill today I never knew this was a proper dish. I didn't know you could just make it. I would have it when my mom made spaghetti, and often would sneak a second bowl- without any sauce. I felt so guilty doing this, like I was eating desert without dinner first. I feel validated seeing this in doing that though.

Here in italy, true buttered pasta almost always has some sage, whether in leaves or powdered is up to availability/laziness. It's "Pasta burro e salvia" and it's one of the lunches of choice when you are a broke student and don't know almost shit about cooking. Also, first you boil the water, when the water is boiling you "drop" the pasta. If you don't do it that way, a thousand italian grandmas will die and haunt your dreams forever and your lasagna will always break when you are preparing it.

Buttered noodles are a staple of a childhood growing up in "humble" homes. I still remember when grandma cooked those. My favorite thing she ever cooked for sure. She added plenty of salt to the water making them really tasty and they cooked different somehow. After she passed away that simple recipe is one of the precious things she left behind :)

If you want to add a twist to it, don't add cheese. Do it with tricolor pasta (normal, tomato, spinach) instead. the butter makes the taste of the tomato and spinach pop more than it normally does. and all of that i just figured out because i only had tricolor pasta left but really really wanted buttered noodles lol

Here is a little suggestion: use garlic salt, it’s delicious on buttered noodles. Edit: I tried sautéing fresh chopped garlic in butter and it is AMAZING! It’s also good with some lemon juice mixed in to the pasta after plating it.

it doesn't have to be fancy. Get elbow mac, cook it, put half a stick of butter and some parm shake. cut up a ham steak into cubes and fry it in a skillet with another half stick of butter then pour pan stuff onto noodles

I grew up eating buttered macaroni noodles and my mother would make it often...we grew up quite poor in the late 80's and early 90's, but I still do quite enjoy buttered macaroni noodles today...

When I was a kid I thought that noodles with butter and a little salt was my "secret recipe" that I had only my parents make so I could avoid eating adult pasta sauce. I was shocked and horrified when I was a little older and I tried to "pass the secret on" to a younger friend of mine and I found out that literally every kid already eats their pasta this way. I was literally so upset that it turned out I wasn't a genius. Kids are adorably dumb, especially when they're us.

I mean, I guess it just depends on what you’re going for. If I want some sort of flavor experience I’ll throw in some garlic and some other jazz, but if I just want something quick, simple and I don’t have to fuss with mincing garlic then buttered noodles are a glorious fix~
