hi sally i mde the biscochos with your recipe theend reslt was amazing and my mom loved them i did have a problem with the dough tearing when shaping and transferring should have i added more flour we had them just now after a sephardi lunch of fresh bamia and rie pilaf thanks foe everything ira

I’m not sure why your dough would tear. My best guess is that you either went a little light-handed when measuring out your flour, or you weren’t delicate enough when rolling out and handling the dough. As you roll it out and shape it, it can tear if you apply too much pressure. Regardless, I’m really happy you made them and enjoyed them! 🥰 Your mom is one lucky lady!

In a regular oven is it 375 ..for 19 minutes?

Use 350° in a Convection Oven and 375° in a Regular Oven. 19 minutes cooking time should do the trick, regardless of which of the 2 ovens and settings you are using, keeping in mind that ovens can run a touch differently, so remember to keep an eye on them towards the end of the baking time. You don’t want them to get too brown.

Convection Ovens tend to run hotter, and hence we drop the temperature by 25° when using one.

Yes, some people added Raki or anis seed, or both! 🥰 My grandmother didn’t, but if I were to add Raki, I’d add it into the wet ingredients, making sure to adjust the flour accordingly (if needed) to make up for the bit of extra moisture. I’m not sure why. If you follow the steps and the exact measurements, this recipe is foolproof. I’ve made it hundreds of times over the years, as did my mom and grandmother before me. Maybe you added too much liquid, or not enough flour???? I’m not sure what could’ve happened. Many people have written to me to say they’ve made them and they’ve come out perfect! I say you give it another shot! 🥰 And as far as crumby, it’s a cohesive dough, not quite crumby, so I’m not sure exactly what you are referring to.

It’s hard to know without seeing how you’re measuring your ingredients, and/or what your dough looks like. My best guess would be that you’re going too light handed on the flour. Are you using 3 large eggs? Are you using a wet measuring cup to measure your 1/2 cup of vegetable oil? This dough always turns out perfectly for me, so I’m not sure what it is you’re doing differently.

Yes! The extra large eggs will add more moisture than you need! That’s why I am so careful with how I list my ingredients. Try large eggs next time and you’ll see the difference!
