Once when I was making a pound cake, I had run out of almond flavoring. It called for a tsp of vanilla and a tsp of almond. So instead, I used the vanilla and orange extract. It was absolutely delicious and I've made it that way since. Happy little accidents!!

biscotti with amaretto, almonds and chopped dried apricots are delicious too. I do love all of the flavors though. I dip the bottoms of my biscotti so the chocolate goes right across and a little up on the sides.

I make cranberry, anise and as well as almond biscotti a few times per month, because I have friends who love some with a cup of coffee. By the way your wonderful wall colours have inspired me to the point my friend Andrea and I have been buying new colours of paint for the main room and kitchen.

Hello, Kate! So glad to know that I'm not the only one making biscotti this time of year. I'm a bit envious though at your fresh eggs and fresh almonds. Thanks for sharing the recipe link from the Guardian. I was worried I was going to have to watch repeatedly and pause to write down the ingredients. Love your cooking and chocolate vidyas -- this was the best of both worlds. Would love to see more variations on the theme if you have the time. Got quite a chuckle when you got into the drawer for the beaters -- my drawer looks about the same but you found what you needed without pulling everything else out. Have a terrific week. Everyone has a drawer like that - if they say they haven't .... well, I wouldn't believe them! and its crazy, because we only use the first three things - one of these days I'll turn it out! I can't thank my neighbour enough for the almonds. they are so delicious! And I will be making biscotti again, my middle kid absolutely loves them! xxxx (31!)

Yum! Those looked grand. I make biscotti every year, too. Hazelnut with Frangelico (hazelnut liquor) for flavouring are a favourite. Also, anything flavoured with anise...

Biscotti are a traditional holiday treat here, however they are sold year-round. Nothing beats homemade though.

Hi nice people, what Kate is cooking are not called biscotti in any part or region in Italy, by all means. The right and only name is: CANTUCCI and definitely with no chocolate on them. Biscotti is the general name for biscuits any sort of biscuits.. Having said this, the cantuccini of this recipe look and must teste fantastic , well done. Love from Italy 😘

And I'm so glad to see that your kitchen drawer is just like mine (except the utensils seem to put up more of fight when I try to take them out....haha) My first thought before seeing the whole video was that you should combine this effort with your homage to Hercules Candies and dip them in chocolate...but of course you were way ahead of me on that idea. Wow...almonds, orange and chocolate...who could ask for more !!!!

I sometimes think I should edit that stuff out, but then, if we're honest, we all have a couple of drawers like that don't we? And if not, maybe folk could have a laugh! I packed up about two thirds of the biscotti and gave them as the birthday gift, but I've been working my way through the last third and they taste rather good. You just knew there would be chocolate didn't you! ha ha !!!

How lovely of your friend to share her almonds with you. I love the crisp sound made when you sliced the biscotti. My favorite is cranberry orange. Oh Kate, I'm still catching up on your videos and the biscotti brought back more memories. I've been making "rocky road" chocolate the last few years, for my 2 children to send them at Easter time. Last year I also added a batch of coffee and pecan biscotti, in the smaller, thinner style. Needless to say, they were a huge hit. Better than a generic store bought egg eh! Watching you in your kitchen makes me desperate to finally find another house, to finally unpack my gadgets from storage, and just get stuck in again. In the meantime, I'll content myself with watching your antics. Regards from Oz.

Norma is my constant shadow. Biscotti can be a bit hard if they are baked too long. That is why they are traditionally served with coffee, it is very acceptable to dip them in to soften them! xxx

I notice you use your new cooker top as a working surface. Does the glass not scratch? Handy place to have, I'd imagine. I've got a tiny kitchen and when cooking with bowls and sheets and pans, I have become adept at balancing things. another 4-5 sq ft would be handy!

The treasure is in us all - all these lovely comments make me feel very loved! Ovens then - Celsius is the unit - I get very confused by Fahrenheit even though I grew up with it. If the weather forecaster says the temperature will be 70'F I have to google is to convert it! (sad) The there is Gas Mark 6 - which is about 200'C I think - I shall have to be more careful just tossing these things out there - I caused a huge problem mentioning caster sugar!!!!! But someone sorted it out in the comments. I have great subscribers! ha ha ha !!!!

Hi Kate ~ refresh my memory, is caster sugar what I would refer to as icing sugar or is regular white sugar? The recipe you are using seems to be simple enough and easy to make. Of course KZbin has popped up a video for another biscotti recipe using cranberries and pistachios. Thank you for the video and I am sure your friend will enjoy her present.

I think castor sugar is what we call granulated in the States.

In North America, the common sugars are (from the finest grain to largest): icing sugar (or powdered sugar) Berry sugar or superfine (caster sugar) Granulated sugar (general purpose) Demerara (very coarse crystals) Rock sugar (or coffee crystals)

Marie has it - that is exactly right - granulated is too dense - caster is for cakes. I have a problem with All Purpose Flour - is that self raising or what we call plain?

The Last Homely House East of the Sea All Purpose Flour is just the ground grain. In the US Self-Rising has both salt and a rising agent in it (baking powder, might have soda as well, depends on brand).
