Spanakopita is a little greek pasty made with filo pastry. I've never met anyone who made their own filo, it is perfectly acceptable to buy it ready made. It needs a lot of butter!
I used feta cheese, but I've made this with ricotta too, onions, garlic, parsley and steamed leaf beet or spinach. After that simple mixture, its all about the construction. Leave them in a hot oven for 12 to 15 minutes. I'm going to try freezing the few leftover uncooked ones so I can get one or two out for a quick supper from time to time.

I love spanakopita! Like some other commentors, I make mine in a rectangular pan, but when I saw you lifting them, golden & crispy off of the baking tray, I made a lightning quick reassessment of my old technique. Never again will I serve a traybake style spanakopita! Thank you Kate.

Marie Currie it’s so easy too, and the left overs (if there are any) are easier to store and eat next day for lunch with a bit of salad. Mmmmm 😊❤️🍂

Hi Kate. I make this quite often by do put eggs in the filling. It seems to make it a lot lighter. I also make it in a pie dish with pastry sheets on top and bottom. Before I bake the pie I slice it up in the dish to make it easier to serve. Enjoy your family visit👍🏻👏🏻

I usually make it in a 9×13 pan, sort of like lasagna. The triangles look delicious and far more practical since they can be frozen. That's what I'll do next time!! Yummmm.

Deena Watts I’ve heard of the ‘lasagne’ way of making it, but these - as you say - are more practical. And more butter probably 🙄😂😊

Such an easy recipe to make. You wouldn't think it would be. Love your fabric. I would love to dye fabric. But I doubt that I ever would. I watched you do it and it very involved. Have a great visit with your brother and your family.

annette whitbeck oh, don’t be put off by the dyeing - it’s very easy, you just need to be a bit prepared. Indigo is quite different from other dyeing, which is easier again! Next summer I’ll do some more dye experiments, it’s an outdoor activity 😊❤️🍂

Cyn Forest the indigo squares will get their day, but not just yet as there are about a dozen things in my head........ nothing new there then .... but there is no hurry. I really like a slow repetitive task when I have time to devote to it. 😊❤️🍂

aikitherese it’s the easiest thing in the world , if you can get over the amount of butter you need! And you don’t let the sheets-in-waiting dry out. You can fill it with ANYTHING, 😊❤️🍂

Hello Kate! This brought back memories for me. I used to make spanikopita for parties and holidays ( just made them smaller so they were a 1 - 2 bite size. I've also used this recipe and method to make a pie. Layer 5-6 sheets of the leaves in a pie pan, pop in the filling and top with more of the filo dough and bake. Delish! Now I think I need to try it again. It's been too long.

I love spannakopita but have never seen it made that way! Brilliant! Now I'm going to try it! And yes, wrap well and freeze!! I would most likely add mushrooms and garlic!

You are a joy to watch. I noticed the white handled knife on your right side. My parents had some that looked like that. The four children divided them up after my mother died, so I still have one. Made of an early plastic I guess.

I watched todays update and then youtube carried on to this old video Those were the days when we could have people over for dinner! As you know I usually watch while making dinner for my troops (6 is a lot of people to keep feeding during this lockdown) and funnily enough I was chopping up a butternut pumpkin and extracting the seeds to roast for some soup for tomorrows lunch. Hope you feel better soon, take care xx

Yum! I love spanakopita. Kitchen shears make the spinach chopping easier for me. Alas, phyllo is very hard to find where I am now in Asia. Also, I’m way late, but hope it was a joyful dinner. ❤️

Those look absolutely perfect! We've never made them here at home but have enjoyed them often in Greektown which is an area in Detroit full of restaurants and shops that offer foods and items from that part of the world. Bakeries sell them also there. Making them at home would be fun and something to try!

Yummo! It's not a meal at our Greek friend's home without spanikopita. The indigo curtains will look really wild when they are finished. I hope you had a lovely meal!

Those looked fabulous!!! Hint: in the future, freeze the ones you don't need that day uncooked. Then cook them per meal. They freeze beautifully. My 3 college roommates/suitemates were 1st gen Greek. To this day, decades later, 2 remain more family than friends. In my downstairs freezer are lovely, frozen pita's (just cheese minus the spinach, same shape) raw and ready to be baked, from one friend's Mom. I get a few big batches a year. Ironically just tonight I had a store bought Greek feta/other cheese blend phyllo spiral with eggplant spread from Russia sort of as a dip (that stuff is SOO amazing...do you have any Russian stores there? Though you can make your own). They go magnificently together. I save the legit ones for special treats lolol. Plus my friend's Mom, while amazingly active for her age, is slowing down a bit, so I make them last as long as possible! Hope you had a lovely dinner party!

Ellen W hi Ellen. I did in fact freeze six uncooked ones for just that purpose. Russian food is practically unknown to me, so I’ll have to look that one up! 😊❤️🍂

Hi! If you like eggplant you have GOT to check it out. The brand I buy at the Russian store is Eggplant Spread by Garden Made. It is one of the few products I've ever had that literally taste home made. Mind you, it's imported, there are no preservatives, only real veggies & it WILL go bad in 3 days (had a teensy bit left the 1st time, since the writing on the label was so small I didn't notice it...they told the truth lolol). There are many recipes online to make your own. Google Eggplant spread with or without adding "Russian Caviar." That is it's Russian nickname. I have not tried this one (or ever made from scratch...I live in HELLISH chronic pain, so sadly the less kitchen time the better lately, which kills me, as I adore cooking :(. Anyway this one looks/sounds the closest to the one I eat. But google others too & explore! Kate, forgot to add, if there is any food that tastes this delish & you would think should be fattening, but is SUPER low in calories, I've yet to find it!! I literally buy them 8 to 10 jars at a time now. If you happen to find a Russian store near you, let me know if you want some other suggestions, although this is, by far, the most amazing find I've had there! But from what I've seen of you, why do I think you'd choose to make it from scratch?! Also some of the recipes I looked through were VERY chunky. You want it softer than that. Not mush, there are clearly small, individual bits over varying veggies. BUT it is far less like a ratatouille and more like a thick spread.

Gosh, how have I not found your site earlier - I am now binge watching all of your tutorials and it makes for super company ☺️. I love the many crafts that you enjoy and the fact that you always greet us as your KZbin friends. I may even try cooking after this mouth-watering episode! And I will definitely be writing my sister’s birthday card with 60 fab things about my big Sis when it is her turn 😍. I have made them in the past Kate with spinach and feta but I only buttered the tops before cooking 😂They are delicious so thank you for reminding me we love them, even my meat eating sons. Hope your family dinner was lovely xx

I saw this last year when it came out and added this to my wishlist ... after a very rough and emotional year(family health and loss), I am preparing my shopping list and will try out a dairy and oil free version- I think my idea will work. I will let you know how it goes.

these look yummy and you can put so many different fillings in them, might make some for Christmas and freeze them, made some mincemeat this year they do not sell it in France and so miss Christmas mincemeat pies :) have a beautiful day x

I have made something similar in the past. I add chopped sundried tomatoes and chopped black olives = Yum Yum! I had no idea this was called Spanakopita either. I love how you fold the pastry too. I shall try this the next time around. Hope the meal was good.

Ooh they look so good! I will have to make some yum yum. I have a recipe for a different filling of roast sweet potato and goats cheese which is really good too. Your meal looked delicious. Kate, not a believer in coincidences, I keep asking myself, "What does it mean..." I found your channel when it was late winter here this year and just thrilled: you do all the things (and *so many more* ) that I do here. (I do them on a MUCH smaller scale.) My garden, love of fabric and paper, quilt tops, knitting projects, time in the kitchen cooking and canning, seed saving & packaging them (I thought I was the only one! I'm obsessed with it - seeds are drying everywhere), and the kitties roaming in and out of my life form the highlight of my days. My grandparents, father's side, were British and took part in raising me until I started school, so my fondness for all things English runs deep. And there you appear, like a long-lost sister or favorite aunt or dream mentor...and *then* I find that the chocolate shop that has touched your heart is within bicycling distance from me, for Pete's sake. I definitely will stop by their store and say that Kate sent me. When I figure out what it all means, I will let you know! *xoxo*

Hello Kate, simple: We all come to a cooking class and bake your delicious Spinakopita. The first time you have to always make them under a supervision, so that nothing goes wrong. You have enough space !!!! You can also email everyone with the ingredients he should bring. No problem. So, we just have to find a suitable date. I have never tried this recipe myself, but have already been able to taste many samples of filo pastry from Turkish colleagues. Let's do a Greek cooking class with Kate. Who is participating? Bridgette Hunt the tiny pan was an impulse buy but I use it often, on my wood burning stove top to warm a little milk for one coffee and a tiny bit of anything heated up, it’s great! 😊❤️🍂

You go girl! I have always been told (by women in the know) how difficult it is working with phyllo. You make it look easy! I’m only this far on your videos. I’m moving along at a steady pace. But I am seeing Eileen back at your house and don’t know where I missed you bringing her back. And I can’t wait to find out if you find out where the chickens are getting out! LOL

Sandra Oranje there is a very popular Greek pita that is made quite similarly to spanokopita but with NO spinach. I'd bet that would be a winner for you!! I like spinach, but still prefer a cheese pita, because sometimes the spinach can add a bit of a bitter taste to it. Plus the cheese ones puff up more! OMG so good now I'm starving! ETA if you want to find it either Google Greek Cheese Pita or Tiropita. I would offer one of my dearest friend's Mom's recipe for it, which is the best I've ever had, but she has NO recipe. She throws, like most good cooks. I keep swearing to go there one day & stand behind her and measure, cause that is a recipe I desperately want. She keeps me pretty well stocked thankfully, but she's getting a bit older & slowing down some, and none of her kids can cook (just pathetic lolol), so one of us has to learn this!!! I've long been as much family as a friend, so hope to do this. Although my friend, her daughter, tried once & got tossed out of the kitchen. But in fairness, I'm a much better cook so I might last longer lolol

Hello again Kate! Im really enjoying the videos - Im on holiday until Monday so Im binge watching! I would love to know more about the indigo dyeing process as I love the shades of blue - do you have a specific video that explains how-to? Thanks for sharing this Kate, I make a dish that is very similar taste fantastic too. The butternut squash would have been great as well. I am roasting some veg for my supper today as well. Hope you had an amazing time with your family.The indigo squares look like they are about 8 inches, am I right? BTW how did your daughter in laws quilt for her mom come out? Anyway you could somehow include a picture of it at some time? xx Angela

Angela10226 it was great to see my bro, yes, the random indigo is about 8” and I’ll get on with it when the fancy takes me, no hurry, I have a few other things backed up! The flying goose quilt is with its new owner in Rio, she is very happy with it! ❤️🍂

No Kate I wasn't talking about the flying goose quilt I was referring to the one that Rita was making for her mum.Do you have more than one brother? Is this the same one that helps care for your dad, that you stayed at his place and he collects is it Beatles memorabilia?

Angela10226 ahh, I’m with you! I have three kids, Owens girlfriend is Rita, her mum has the flying goose quilt, my d-in-law Anna is making the other quilt. It’s going slow because she wants to make it with my assistance. The quilt top is sewn together now, next session, we’ll do the ‘sandwich ‘ then she and I are going to hand quilt it. My daughter and I just made a baby quilt for her friend who is due in November. I have two brothers, I’m not doing any quilting for any of that lot at the moment ! 😂😂😂

Sometimes we should go with our gut, I was going to say Anna and for some reason I talked myself into calling her Rita and I know that she is the girlfriend. Oh well I'm glad that Anna is coming along with it. It will be so special for her mum. I'll send you one to bind since you love doing it so much and you can send me one to quilt for you by machine. Haha, that would be interesting wouldn't it?

Tree D I know Theresa, John is 31 now! Where did all that time go! Owen was four when you and I were learning all that ‘stuff’ he’s 28 now and about to move to Montreal with his beautiful girl. Martha 32 and just bought a house with her gorgeous man! It’s crazy how the time has gone xxxxxxxxxx

Are you saying that plant is “leaf beet”? If so is that the official name? I can’t find seed for it in the US.

I had the same question... I went searching. ...Leaf Beet Group consists of a number of different cultivars of Beta vulgaris which are grown for harvest of leafy vegetables (mostly chard and beet spinach). so far, the only other thing I find is talking about beet greens. Kate has talked about beet tops as a different plant from leaf beet, if my memory serves. Garden Novice Farm I just know it as leaf beet but you can also search for perpetual spinach ... because I think it’s that. The stuff we buy in supermarkets called ‘spinach’ is not the traditional spinach, but this stuff - that I know as leaf beet. I’m going to check my seed packet, but I’m pretty sure it’s perpetual spinach 🤔🌿
