Hi there! :) It is best to use a tube pan if possible as the cake needs to stick to the edges (including the middle edge) to rise properly, otherwise you can try a smaller pan like a loaf tin (divide the batter into two loaf tins or more if your loaf tins are small) but just make sure they're ungreased because you want the cake to stick to the pan as it rises :) and also adjust the cooking time as necessary. Hope that helps!

Hi there! :) You could try lemon juice or white vinegar, but I haven't tried these myself so not sure how they'll work when it comes to angel food cake - sorry I couldn't be of more help!

lemon juice, i believe it's twice the quantity of c.o.t.

It might be called tartaric acid instead. Just make sure it’s good grade for safety. If you live in a winemaking area, it’s widely available. Amazon has is if necessary. But lemon juice and white vinegar are both acceptable substitutions.

Finally a chef who actually adds the correct amount of sugar on the whipping cream. I never add more than 2 to 4 tablespoons. Every chef I watched adds a cup or two of icing sugar to the cream. It makes no sense at all.
