Black Eyed Pea Salad with Mediterranean Flavors | The Mediterranean Dish

Made this dish tonight and it was fantastic!! I am on a vegan fast for 3 weeks and happen to also be exploring recipes in Middle Eastern and Mediterranean cuisines. So, now I have both pomegranates and pomegranate sour syrup in my pantry. Didn't have black eyed peas ready, so I used pinto beans. Worked extremely well but cannot wait to try it with the peas which are a little sweeter.

This is so close to the fresh cucumber salsa I made my boy's when we ran out of my mom's homemade tomat salsa. I loved it. My boy's, I think rejected trying it for loyalty to my mom's recipe. Maybe, presenting a salad will be better recieved. Lol. Loving your recipes. Going to make your cilantro lime chicken tomorrow. Mmm.
