Thank you Judy! You are a gem. Salting the water too early got me thinking that the same thing may have happened when I made dried chickpeas. I salted them with a curry mixture I’d made and they took literal hours to cook down and never fully got soft. Thank you again ❤

Hi Yonni! Thanks for watching and sharing such kind comments! That may be what happened with your chickpeas. Another thing that can cause beans to take forever to cook is their age. The further away they get from their "best by" date, the longer they can take to cook. I can't say if your chickpeas were old, but it's definitely something that can cause beans to take a prolonged time to cook. Not long ago, I cooked some great northern beans that I knew were old. They literally took all morning to cook, and like your chickpeas, they didn't get fully soft. I called them done anyway and they were edible. Now we know! I'm glad the video was helpful to you. Hi Judi! Just found your channel. I'm making a black eyed peas curry but I've never cooked from bagged dried beans before. Your video was very helpful. I'm using the quick boil method and I have you sitting right on my countertop while trying to follow the directions. Lots of rinsing and refilling with water haha good thing I did my research instead of just dumping the bag in the pot of water and just boiling it. 😅

Hi Spirit! You may lose some water-soluble vitamins when soaking beans or peas of any type. However, soaking is really important for them to cook properly from the dried state. If you have another way to prepare them from the dried state, then go for it. The "quick soak" method may be somewhat better since soaking time is shortened. But anytime plant foods that sit in water for any length of time, they will lose some water-soluble nutrients. I'm not sure that can be helped in any way. Thanks for watching and asking!

Thank you for this especially the part about the salt. I once tried to make some red beans and put in a great deal of ham seasoning broth powder which was very salty and I could not get those red beans to cook. I make pinto beans with salt or broth powder and it seems to work after about an hour and a half but I won't try it again. 👍

Hi Skye! I'm glad the video was helpful to you! Thanks for watching and sharing your experience with cooking dried beans. Just remember to add salty ingredients toward the end of cooking, or at least beyond the half-way point to give the outer skins a chance to soften up. That should help solve the problem. Other than that, old dried beans can also take a long time to cook, even without added salt. They will eventually cook up soft, but it will take longer than expected. I've encountered both issues, so I speak from first-hand experience! Happy cooking and take care :)

Hi Judi, I just wonder why you have to cook your beans with low heat. I tried to do that but my beans still stay hard after hours so every time I cook beans I just bring water to a rolling boil and cook them. After an hour and they will be tender.

Hi! Really, you can cook them at a rolling boil if you want. No issues. I opt to turn them down some after bring them to a boil to help keep them from boiling over. Sometimes (at least initially) beans will form a foam on the top of the water which may cause a spill from the pot. Turning it down helps to avoid that issue. (Maybe it's a water quality issue, not sure) If you don't encounter that problem, then go for it! Thanks for watching and sharing :)

You can do that if you insist. But they may cause more GI gas than if they were soaked first. That same principal applies to all dried beans and peas. They will also cook faster if they are soaked first. Thanks for watching and asking!

I am scared that by soaking beans and throwing the water you lose all the water soluble B vitamins. 😢 but beans also have some nasty defence poisons in them that need to be removed by soaking

Hi Anthony! I understand what you are saying. But don't be afraid of losing ALL the water-soluble vitamins. You won't lose them all. AND it is important to soak beans before cooking them. That is actually more important than worrying about the loss of vitamins (since not all are lost). You will get some B-vitamins from other foods too and with all whole foods combined, you should be OK. I ALWAYS soak dried beans before cooking them and I eat a whole food plant based diet. I'm getting plenty of B Vitamins. When in doubt, enter your foods in Cronometer.com and you can check for yourself. I have a couple videos on how to use this free online software. Did you know bicarbonated of soda makes your meat and beans or peas tender soft and help with digestion... Ps. Pink salt 🧂 💗 is very different to white salt by the way but salt can stop or take time in cooking ...but judi try bicarbonated of soda you might call it baking soda in the USA 🇺🇸 not baking powder .
