One thing I have observed with Uncle Clyde, de man doh even have to taste de food to know it's good. I had to mention, I have never ever seen a zaboka like that, it looks delicious.

The fats add flavour! But, if you brown the meat sans oil, there is a possibility that the sugar may stick to the bottom of the pot.
