This recipe is amazing. I ground 30/70 ratio of pink / black peppercorn and the aroma is heavenly! Poured the sauce over smoked chicken thighs. ❤

OMG, I have been looking for this recipe for years. One of my favorite restaurants in Zhuhai, China had a "Black Pepper Chicken" dish, consisting of boneless skin-on chicken thighs, pan fried with this sauce. It was so good, and this sauce matches it exactly. Every other recipe is either an italian black pepper sauce, or just a generic soy based wok sauce with black pepper added.

It gives it a buttery umami taste. Restaurants that make this sauce all use butter, you can try using shortening as a substitute.

You can opt to not add salt. It may be the chicken stock you used is high sodium.
