I’ve watched my great grandmother clean and _clean_ them things, pull of the membrane and cook these things outside in her cast iron pot with a mixture of seasonings I couldn’t tell you and the smell was still pretty damn stout. I will never try any because I *cannot* get past that smell! Thank God my great grandmother never put any on my plate because I knew I would have to eat it!

I’m married to a black man and the first time I ever saw chitlins was Thanksgiving at his family’s (I’m from Chicago). We were all standing around the buffet table saying grace and of course, I was in front of the chitlins on the table. Black people don’t say grace quickly. Everyone gets to add to the prayer and that shit could go on for 10 minutes. I’m just like Gary...couldn’t get away fast enough. 🤢🤮 The next day someone was reheating leftovers in the microwave and I am not lying, that smell never came out, even after a year. Makes me gag just thinking about them.

When my mother cooked them she would cook them in a pressure cooker for awhile. The aroma was about as bad as making a fish stock with shrimp heads. Eventually the odor goes away. Only my sister and mother enjoyed the chitlins.
