I understand your frustration over him having one technique, but I think that's what makes each character special. They have a limited set of powers, that get progressively better or more diverse. It would be boring if he every power imaginable. He already has every power up imaginable, lol.

Hitsugaya is one of the captains with the most moves. He got his bankai early, he could get along with his zanpakuto the best, their relationship is very close and for his relatively young age, Hyorinmaru already taught him lots of things. He's the opposite of someone like Kenpachi who didn't call his zanpakuto for long time because he didn't care. Ichigo is still young and already achieved a lot at this point, but there wasn't that much time to build that harmony with Zangetsu as in case of Hitsugaya. So yes, one technique, understandable.

I completely forgot that Ichigo never learned anything other than getsuga tensho and how to control his powers. Then he learns getsuga tensho but stronger. Then he learns getsuga tensho but in bankai. Then he learns to control his mask to make getsuga tensho stronger. Then he learns a new way to use getsuga tensho. I completely forgot how back when I was watching bleach for the first time I was also frustrated that it was always the same technique and he never learned anything else like kido or some other kind of attack unique to his sword, which it isn’t even unique to him because his dad has the getsuga tensho too!

I wish I could explain why he only knows Getsuga without throwing spoilers. Just gonna say this. The techniques are basically taught by their own swords, and Ichigo hasn't really spent much time with Zangetsu, and all he knows is based off what he saw Hollow Ichigo do against him. I won't say more cause it'll actually spoil big things from the new Bleach Thousand Year Blood War arc.
