Question: At 1:57 Separation of selected faces from object by not using keyboard shortcuts? Found it. Edit Mode/Mesh/Separate/Selection to create a new object

you can press F3 and type separate for that as well. It'll separate the mesh as well!

If your scale values are not reset then you will get inaccurate results with modifiers, applying a scale reset with ctrl+A will rectify this. Hope that helps 😁
