You do not. Optical comes from a digital source to the DAC and then run the RCA outputs to an amp or powered speakers.

..another not so nice thing is once you dial in the perfect volume level and you turn it off, you won't be able to turn it back on at that same exact level.

That is true, but I rarely turn off my DACs. It's actually better for the circuits to not be constantly warming and cooling.
