I also beat this guy on hard mode! But my strategy was more to invest in hp and hp only I only took mortal damage once because I failed an ice block that dealt 24 damage I healed with 2 Hp left

Basically think as taking mortal damage as a countdown, it goes down slowly giving you enough time to heal back hp even after you have “0 HP” so it gives you a chance just to get back up

It says "barely survived" so technically they should be alive with 1 hp even if not healed.
