Nasi Lemak is a national food in Malaysia. Tourists who came to travel would definitely try it. It's even one of the must-have airplane food menu for Malaysian airlines. Of course, the flavour of Nasi Lemak cooked by different races also has some differences in taste, but they all have their unique taste. Delicious nasi lemak restaurants or stalls can attract the other races long queues to crowd the area for support.
The meanings for Nasi Lemak "Nasi" means rice, Lemak means fat, and here it refers to coconut milk. It is named after the rice is soaked in coconut milk and then cooked into rice. The knotted pandan leaves are cooked together in a pot, spices such as ginger and lemongrass can also be added to increase the aroma of nasi lemak. We choose to use extra virgin coconut oil instead of coconut milk. Of course, the taste is different from coconut milk, but it also has many benefits. The extra virgin coconut oil version tastes less greasy and more fragrant. It is good for some someone can't eat coconut milk due to some stomach digestions problem, you can try coconut oil instead.
How to cook a delicious Nasi Lemak? The rice need to has a good texture and taste, and the sambal sauce is also the soul of this dish. The recipe we shared is to use salted fish to increase the flavour of sambal sauce, it is moderate spiciness. It can also be accompanied by a little Sambal Belacan to enhance the taste.
Another reason for the popularity of Nasi Lemak is that the side dishes have a lot of variety. For example, there are Nyonya Otak-Otak, Shrimps Paste Fried Chicken, Curry Chicken, Asam Prawns etc. After the meal, you can also have another Nyonya dessert such as Bubur Cha Cha or Pulut Tai Tai, which is a perfect Malaysian meal.

- 350ml Water
- 2pcs Pandan Leaves
- 20pcs Butterfly Pea Flowers
- 0.5tsp Salt
- 4tbsp Extra Virgin Coconut Oil
🍡 Side Dishes (Adjust by personal preference)
-20g Anchovies
-20g Peanuts
-2pcs Eggs
-16pcs Cucumber
🐟 Fried Yellowstripe Scad
-8pcs Yellowstripe Scad Fishes
-1pcs Banana Leafs
-1tbsp Tumeric Powder
-1tsp Curry Powder
-1tbsp Salt
🍲 Spicy Sambal Sauces
-----Blended Ingredients-----
- 3cloves Garlic
- 1 stalk Lemongrass
- 6pcs Shallots
- 10pcs Dried Chillies (Soaked & Drained)
- 1pc Red Chilies
- 1pc Bird Eyes Chilli
- 4g Ginger
- 100ml Water
--------Sauce Seasoning---------
- 3pcs Pandan Leaves
- 1pcs Onion
- 1tsp Tamarind
- 10g Salted Fish
- 1tbsp Oyster Sauce
- 30g Palm Sugar
- 90g Cooking Oil

椰漿飯是馬來西亞全民美食,來旅遊的遊客都必定會嘗試的一道馬來西亞特色美食。 甚至是馬來西亞的航空公司常年必備的飛機套餐之一。 遠近馳名的椰漿飯比比皆是,不同種族烹飪的椰漿飯,風味當然也有些差異,但都各具特色。 好吃的椰漿飯餐廳或攤位,能吸引其他種族的光顧在外大排長龍把該地區擠得水洩不通是常有的事。
椰漿飯的馬來文是“Nasi Lemak”,“Nasi”意為飯,Lemak本意是油脂,而這裡指的是椰漿;就是把米浸泡在椰漿里後再煮成飯而得名。 一般可用普遍鍋子或電飯鍋;有時候也會將打了個結的香蘭葉放入鍋裡一起煮,亦可加入香料如姜、香茅以增加椰漿飯的香味。 這次我們選擇使用特級初榨椰子油來取代椰漿,口味上當然比起椰漿有所不同但也別有一番風味。 特級初榨椰子油吃起來少了一種膩味,而且香氣更濃鬱。另外對於一些腸胃不適不能吃椰漿的朋友可以試試用椰油取代哦。
好吃的椰漿飯除了要把它的”油飯”煮得口感和味道好之外,它的叁巴醬也是這道料理的靈魂。 我們分享的食譜是有用鹹魚來增加風味,辣度中適。 吃飯時也可以再配上一點參拜馬來盞來提味。
椰漿飯受歡迎的另一個原因是配菜的搭配可以很自由,例如娘惹鯉魚包,峇拉煎炸雞,咖哩雞,阿參蝦或任何你喜歡的海鮮、肉類或蔬菜。飯後還可以再來個娘惹甜品如摩摩咋咋或者藍花咖椰糯米糕就是個完美的馬來西亞特色餐點啦。
椰漿飯傳統上是用來當早餐吃的,在清晨開始就在馬來西亞的路邊檔口販賣,現在在菜市檔口或店家都有售賣。 通常是以報紙、油紙或香蕉葉包住賣的。 也有些餐廳把它升級成豪華版本,盛在盤上搭配更高檔的食材當午餐或晚餐吃,讓它有機會登上華麗的餐桌。

🍲鹹魚洋蔥香辣醬

- 3瓣 蒜頭
- 1支 香茅
- 6粒 小紅蔥
- 10條 乾辣椒(泡水後,瀝乾水)
- 2條 紅辣椒
- 1條 小辣椒
- 4克 薑
- 100毫升 清水

小雁老师,刚刚煮好了,超级辣的,能有什么办法解决吗?可能辣椒干很辣,之前处理辣椒干不会呛到,今天会一直咳嗽,感到很呛…辣到真的会爆炸…味道真的不错,只是太辣了…

可能你买到的辣椒干比较辣,或我们吃辣的程度不一样😄 太呛的话可以减少辣椒干的份量,或泡热水。

Hi, both is optional. The tamarind is make it more appetite, you can replace with lemon juice. Salted fish is for more flavor.

剪班蘭葉不可以剪它的心啦!這樣會傷害班蘭葉,要從外圍的葉子剪進來,中間的心是它的嫩葉,要成長、長大的。
