I don’t understand why we didn’t see the top fabric.??? The fabric no. 6, I guess. I love the pattern and the tutorial was wonderful!

Yes, there's six fabrics and only five pieces to the block, so you'll see the 6th fabric in the next block. :)

I don't understand why you could not trim to 10.5? Seems that would give more room?
