They are not your usual "green pea" from the freezer section. They are drier and have a firm texture in comparison.

These are known as blue boiler peas because as they dry in the pod on the pea plants in the fields before harvesting, they develop a bluish grey cast. Soaking brings back the green somewhat. They are the same type of peas as Marrowfat peas though the Marrowfat are often larger.
