Learned over the years from various cooking shows if you place your limes or lemons in the microwave on high for 20-30 seconds you can get more juice out of them. Tried it and it does work. I think I would substitute mozzarella for the feta while using basil and mint with the feta.l

This looks absolutely lovely. For those who don’t like feta, I would think goat cheese or Mexican Cojita ( crumbling cheese) would be good substitutes. The Mexican cheese is quite mild in taste, slightly salty. The goat cheese has a slightly tangy flavor- both are crumbly

We always make it with the blueberries, but I'd think the black grapes would be good in here, too if you wanted a substitution.

I was thinking blue cheese might be good as well. Also it could be interesting to use mint leaves instead of basil. A variation for a summer salad could use other bluish berries such as Boise berries or blackberries. I see lots of fun things for this salad.

I don’t want to be mean, to me this is hilarious. My husband and I have been together sixteen years and every night at supper he says I don’t think you’ve ever cooked anything I don’t like and then… I made the banana salad. Okay I’m giggling as I type. He couldn’t get around the vinegar and neither could I and I really like bananas. 😂 He headed for the kitchen to get a hunk of my mango crème rhubarb pie to cover it. 😂 I rinsed my bananas off and had a small piece of pie too. He said that was the first time I made something he didn’t like but he choked it down. 😂😂😂 I’m sorry this was so funny to me. I saw this video and I said I’m scared of your salads now and we laughed. Well, nutz... I don't like blueberries. I'll eat them, but the flavor is just - ok. Feta is tasty stuff! I never knew it should be rinsed. Oh, no - you - didn't, heap the honey! 🤣

Hey Brian. The feta is packed in brine but it's still really tasty like that. But if sodium is an issue, as it is for many of our viewers, rinsing it will help cut that out some. Tom and I love blueberries and we hope you will try this salad out. We love it for how refreshing it is. And I'm not a huge feta cheese fan but I do think it's great tasting in this salad. I definitely respect those that can't have much sodium, if any. When I was in the hospital in Oct. '15 getting my pacemaker, after the procedure they told me to only pick from the food menu options that were, basically heart patient friendly. I believe at least part of it is some heart patients have to limit their sodium intake or can't/shouldn't have it at all. They never told me to not consume it or to limit it though when they discharged me. I must not have a sodium related heart condition - yay! I do like feta! It's great in salads but I particularly like it in burgers.

Yeah... It wasn't too bad - the symptoms leading up to the hospital visit were worse. They said my pacemaker would last seven to ten years and I'd have to go back to get a new one. Ten years will be Oct. '25, which isn't too far away. I'm hoping the technology of pacemakers have improved since '15.

You want the basil in the salad. It will complement the fruit without overtaking the flavors and being too strong.

It is cheese so it will need to be placed back in the refrigerator after your meal. But it will be fine to be left out for a while at a cookout or meal. It won't spoil quickly.

Hi Tom Love your site so much♥ I bought a very large bag of beautiful vidalia onions....I use a lot of onions in my cooking. After making a big bowl of onions and cucumbers in vinegar, sugar and water brine, I wondered how else could I showcase these onions. Looked on Google and found Recipes for Cream of Vidalia Onion Soup. Just wonder if you have made this. ♥

Thanks for the sweet compliment. We love Vidalia Onions too. I bought 50 pounds from the Shriners a few weeks ago. I have not made Cream of Vidalia Onion Soup, but I'd love to try that recipe. When my onions start to show their age and need to be worked up, I chop them and put in vacuum seal bags to keep in the freezer until I need them for soups, stews, casseroles, etc. They'll last all winter in the freezer. Thanks for supporting our channel!
