This is one of the traditional Goan method of storing raw mangoes as a provision for the rainy season. Tastes best after about 2 months as they cure in the brine. This method may slightly vary in different parts of Goa.
Tips:
Don't over boil.
Use a dry jar to store.
Ensure the raw mangoes are immersed in the brine.
Store in a cool dry place for long lasting.
Use any mangoes but raw. I have used the small variety ( ghonta)
