Bolognese Sauce over Zucchini Boats

This hearty sauce is full of flavor and pairs brilliantly with zucchini to make zucchini boats.
1. Start by slicing four medium zucchini in half lengthwise.
2. Core out the center of each 1/2 using a grapefruit spoon.
3. Place cut side up in a casserole dish and cook in a 325 degree oven for 10 minutes to dry out a bit.
Sauce
3 T olive oil
1/2 cup diced onion
1/2 a red pepper, diced
1 lb 90/10 hamburger
1/2 tsp red pepper flakes
1 T dried basil
3 cloves of garlic, minced
1 15 oz can of tomato sauce
1 1/2 cups Parmesan cheese
1-2 cups mozzarella cheese
Salt and pepper to taste
