Carbquik claims to be a versatile all purpose baking mix and says it is low carb and can be used for all kinds of baking needs.
I decided to test the pancake recipe from the box and see if the claims proved true.
The box recipe calls for 1 stick of melted butter but I found it to be too much fat and the pancakes came out flat and greasy.
This called for a hack. I altered the box recipe by reducing the butter to 2 T (salted) and added 1/2 tsp of vanilla extract. There is one measurement from the recipe that can be tricky. It calls for 1 3/8 cup of water. 3/8 is equivalent to 1/4 cup + 2 T. Only add as much of the water as you need to make a batter that isn’t too thin. You want to be able to pour it onto the griddle but it shouldn’t be like cake batter.
The recipe makes 10 4 1/2” pancakes and there are 1.2 carbs each. I measured 1/4 cup batter on the griddle for each pancake. Cook for 3 to 3 1/2 mins on the first side and 1-2 minutes on the other.
This hack worked perfectly! The pancakes turned out light and fluffy. Add some homemade maple syrup and bacon and breakfast is ready!
Butter Maple Syrup
2 T salted butter
1/2 T maple extract
1/4 cup allulose syrup
Cook in the microwave for 30-45 seconds. Syrup will boil quickly.
Let it cool for a few minutes then stir gently. Be careful! It can still bubble up if it isn’t cool enough before you stir it.
