Honestly the train holding innocents works too since Grievous is sadistic and cares for pretty much no other being in the galaxy except Dooku and Sidious (well just Sidious since Dooku is dead at this point). This is one of those moments where I respect Obi-wan with the stunts he went through during his duels. From holding on to dear life while Darth Maul had the high ground, to the fight with Jango Fett, to the legendary duel with Anakin in Mustafar. His duel with General Grievous was no exception and an amazing duel. But with this deleted scene, I could see Obi-wan having been pushed too far with all the stunts and absurdity he went through. I wouldn’t blame Obi-wan if he thought “Enough is enough.”

I think he was originally supposed to be the return of Maul rebuilt as a cyborg as an obvious analogue to what would later happen to Anakin.
