Biryani is such an incredible dish and there's so many varieties you can find. Spicy, not spicy. Chicken based, lamb based, beef based, goat based, vegetable based, tons of ways to cook it. And each culture and country have their own way to make a biryani. Like all the great dishes of the world, you can't go wrong really.

I'm an Indian and I do not have even the slightest ounce of an Indian Accent (I was fortunate to be taught by an English Teacher who was brought up in Yorkshire). I sound very NRI (as per a few close friends of mine) and everyone is okay with that. Fake accents are the ones who wanna act cool by immitating an accent poorly. If they can immitate an accent perfectly, it's all normal. You guys can probably do nothing valuable but can certainly spark arguments.

Random, but I'm so glad he differentiated between nutmeg and mace and gave mace the recognition and credit it deserves! Like many other spices, it was highly sought after, expensive, rare, and originated in India! Today we don't give a second thought to using nutmeg in common American cuisine.

I love very spicy foods, typically ask for "Thai spicy" or "Indian spicy" in restaurants, and yet their biryani was too much for me - tearing, sweating, coughing, red face for hours. 😅 But it's definitely an excellent restaurant, worth a visit when you're in NYC.

Indian cuisine is some of my favorite. I was lucky enough to stage at a very cool Gujarati restaurant in the Bay Area for a bit and it was such a wonderful and educational experience. Have heard some amazing things about Dhamaka and excited to try it at some point. I know he is presenting a certain look for the camera, but that much jewelry and accessories in the kitchen is kind of gross. Still seems like a nice guy and was very photogenic. Loved seeing the biryani cooking process, he is a great instructor.
