Chef Lucas Sin is standing on the streets of Kennedy Town at 3 A.M. for an extremely valid reason-Sun Hing, one of Hong Kong’s last operating late night dim sum restaurants, is just opening for business. I watch so many food vloggers but noone speaks about food the way Lucas does with detail and history. Often they just stuff their faces and just talk about the taste of what they’re eating. Lucas needs his own food show 👍🏼

3:00 You might wonder why he's tapping on the table while the tea is pouring. Having lived in Hong Kong, it's the way they thank the person pouring the tea for them. You pour the tea for your elders / friends before you pour for yourself.

I like how Lucas speaks so fast trying to pack all history, theory and stories of the food he introduce, really feels his passion for HK cusine! There are also other late night dim sum in Tai Wai, but this is really historical and authentic grass-root dim sum place

An interesting fact about this place is that its near the University of Hong Kong! Student dormitories normally have hall activities until late night so its a tradition for them to have morning tea “早茶” afterwards! Most HKU students probably has eaten here before 😂

The fact that I know many of the staff of this restaurant shown in this video because I live nearby (Kennedy Town) and I would occasionally visit this dim sum restaurant to have the Siu Mai, beef balls, fried milk etc. gives a special feeling to me.

I used to go here nearly every week when I studied in HK around 15 years ago. So happy to see them still going strong, many many great memories of it. Had my first (though not last by any means) chicken's feet there, along with many other amazing yum cha I still think about now.

Testing dim sum in the 70-80s was surprisingly the Siu Mai, as it was the most elaborate in variety of ingredients & complexity of flavors. IMO, It, Har Gow, Cheng Fun, Char Siu Bao are my testers.

This is the first time I learned that Dim Sum means whatever your heart decides, and I love it! My Chinese teacher just taught us that Dim Sum means snacks which always made me wonder how heart (sum) related to snacks.

I love love love these sorts of tiny small eateries in HK. Big fancy restaurants are great sometimes, but these little places where everyone's crammed in on tiny round tables and stools is the quintessential HK eating experience.

When lau sa bao are fresh, the filling is approximately 27 million degrees. Do not joke around with that stuff. It is HOT! I have fond memories of burning my face off trying to eat them.

I remember going to this spot after nights out with my classmates while on exchange in HK. The mix of young kids there for an after party snack and oldies getting their breakfast was exhilarating. Super nice spot!

Wonder if the washing with warm tea serves purpose - not that they don't know how to wash dishes properly. It warms the cups before you pour tea into it. It also rinses the end of the chopsticks you eat with because who knows which end of the chopsticks are picked when you pull it out of the dispenser or when table is laid. Also when tea is first brought to the table, it is newly brewed and so not strong enough. If you are helping yourself, who keeps track of what is taken so the bill can be added up or did they trust you to mark the card correctly?

You should have mentioned the finger tapping on the table thing when someone pours you tea - basically a way to say thank you/kowtow. XD That place is indeed great. Nearby in SaiYing Pun on Pok Fu Lam road and 1st Street is "Three Uncles" dim sum joint. A fave of Bourdain. Opened for many decades. The original brother/uncles have recently retired but young gen family members keeping the place going. Three Uncles is not necessarily open to public at 3AM but they're cooking around then and you can get takeout of a bunch of dim sum items if you're nice.

the main purpose of washing your plates and bowls in wash tea is to warm up the plates so that your tea and foods stay warm longer - what I was told in Hong Kong
