My dad has been smoking whitefish in western Montana since the '70's. We would go fishing for whitefish during the winter when trout we're out of season. I really enjoyed watching this!

The best way to add sweetness to a tomato sauce is grated carrots. the quicker you are cooking it for the smaller you grate them and they leach out so much sweetness that it's like adding sugar but healthier and adding the beta-carotene. I always add it to my pasta sauce.

sugar is a good way too, carrots also add carrot flavor and change the texture. sometimes you just want sweetness and thats what sugar is. sometimes you dont have time and sugar is faster. nothing wrong with adding sugar for some sweetness, just like adding acidity or adding salt or adding heat.
