Shutki, or dried, cured fish, can be a polarising subject among Bengalis. To generalise, people from East Bengal (present day Bangladesh) love shutki in all its stinky glory, while people from West Bengal find the very idea repulsive. In a modern world where more and more people are discovering the nuances of smelly fermented, cured, food-blue cheese, stinky tofu, lutefisk, kimchi, axone-perhaps it is time to revisit our own past and give shutki a chance.
This dish, hot and loaded with garlic, is a very accessible gateway into the delicious world of dried fish and meat. We hope you give it a try.

Remember: you need to cook rice twice your regular quantity on the shukti bhorta days coz it’s irresistible.. it’s addictive…

বাঙাল দের এক অত্যন্ত জনপ্রিয় খাবার শুটকি। পেয়াজ, রসুন দিয়ে ঝাল গড়গড়া করে গরম ভাতে জমে যায় বিষয়টা❤🥰

আমার মা এটা ফ্রেশ লোটে মাছ দিয়ে বানায়। যেদিন এই রান্নাটা হয়, মা এবং আমার মধ্যে competition লেগে যায় যে কে কতোটা খাবে। অগত্যা বাবা রেফারী হয়ে ভাগাভাগি করে দ্যান। On another note, Shutki ba the drying of fish is so common amongst the Eastern and North Eastern regions. আমার পরিবার originally বরিশালের হলেও, আমার প্রথম experience of শুটকি was in Guwahati, where some friends cooked it in the most predominant way amongst the North East. ওখানে মাছটা বাটা খাওয়া হয়। তাতে smokiness ta retain হয়। তবে এই রান্নাটার best part হল ওই কড়াইতে লেগে যাওয়া পোড়া পোড়া অংশটা! :)

আমি উওরবঙ্গের, এটা আমাদের খুব প্রিয় একটি খাবার, এখানে বাঙাল ঘটি ব্যাপার নেই,সবাই খুব পছন্দ করে এটা ❤️

As a girl from Chittagong Hill Tracts in Bangladesh, shutki is always favourite item for me. I was famous for cooking shutki in my university life. When i cooked Shutki my seniors and batchmates always knocked my door to taste it, sometimes i felt irritated. But shutki recipe helps me to make many friends.

I'm a vegetarian but this represents culture to me. Being my mom coming from Bardhaman (She's not Bengali, just happens to come from there), I have experienced Bengali street food and it's an enriching experience which is not easy to forget, the puchkas, ghugni, chaap, bara bhaja, jhaal muri etc. Food clearly defines roots to me and I'm so proud to have known this cuisine.

Being a Bangal (my ancestry hails from Bikrampur, Dhaka), Shunkti maach is a true delicacy for me. I was waiting for this classic Bangal dish to be shown on your channel for a long time. Just a little addition.. after you soften the shutki in warm water you can slit it slightly and take out the middle bone.Then you may grind it. That makes it less chewy. Wonderful to watch your

Thank you so much for destigmatising it. A ton of people look down on shutki, probably because it has this really strong smell. But what people don't realise is how amazing it tastes. Thanks for bringing it to the forefront. ❤️

Yaaaaasssss.....as a bangal (chottogrami) it's one of my favourites... I'm already drooling just by watching the video......but this is a little different than how my mom prepares it
