Christmas Red Velvet Cake Recipe 🎄 / Cup measure

What cake are you planning to bake this Christmas?
I'm going to make a red velvet cake. :)
I don't think there is a cake that goes well with Christmas like Red Velvet Cake.
The color is gorgeous and the taste is good too.
As you can see at the beginning of the video, this cake is very soft.
If you follow the video, you can make it too.
I used a small amount of food coloring by adding red yeast rice flour, but please refer to the attached recipe to make it without red yeast rice flour.
And for cocoa, please use natural cocoa that has not been processed in Dutch. (Hershey Cocoa Powder)
Dutched cocoa powder is very dark in color, so a bright red color is not suitable.
I made strawberry puree, made syrup, made jelly and cream.
It has become an all-purpose sauce that gives out a delicious strawberry flavor.
(You can also make it with frozen strawberries.)

237 ml = 1 cup
15 ml = 1 Tbsp
5 ml = 1 tsp
1 egg (without shell) 53g
Heavy Cream (38% Milkfat)
(Chocolate is minced, flour is before sifting)
● Fluffy Red Velvet Cake
( Mold size: 20cm*20cm )
4 eggs (225g)
110g sugar ( 1/2 cup + 1 Tbsp )
pinch of salt
5ml vanilla extract (1 tsp)
12 g Honey ( 1/2 Tbsp )
115g cake flour ( 1/2 cup )
3 g cocoa powder ( 1 tsp )
6g red rice flour (1/2 Tbsp)
(121g cake flour + 3g cocoa powder + red food coloring)-- When red rice powder is not used
45 g milk ( 3 Tbsp )
40g unsalted butter ( 2 Tbsp +2tsp)
Food coloring (red color)
● Homemade Strawberry Puree
250g Strawberries (cut into cubes)
65 g (1/3 cup) sugar
10ml lemon juice (2tsp)
● Strawberry Syrup
50g water (3Tbsp+1tsp)
25g Strawberry puree (1Tbsp+2tsp)
● Strawberry Jelly
55 g sugar (1/4 cup + 1 tsp)
2g pectin (can be omitted, but changed to 5g of gelatin)
75g strawberry puree (1/4 cup + 1 Tbsp)
75g raspberry puree (1/4 cup + 1 Tbsp)
3 g gelatin ( 1 tsp )
● Strawberry whipped cream
180g heavy cream (3/4 cup)
60g Mascarpone (can be replaced with the same amount of whipped cream)- (1/3 cup)
80g Strawberry puree (1/4 cup + 1Tbsp)
5 g gelatin ( 1 tsp +1/2 tsp )

45g Starch Syrup ( 2Tbsp )
25g sweetened condensed milk ( 1 Tbsp + 2 tsp )
3 g ( 1 tsp ) powdered gelatin
+ 15g of water ( 1Tbsp )
95g white chocolate ( 1/2 cup + 1 Tbsp +1tsp)

● What is red rice flour?
First, red yeast rice is made by fermenting white rice with red koji mold.
