Wanted to get a stand mixer for my bread making, but when I look at the popular brand like Kitchen Aid and Kenwood their price are on the high side, I mean really high! So I did some research and found that most stand mixer brands are pretty much the same like the way the spin and mix things unless I go for professional type. So I decided not to spend too much on a stand mixer as I am just doing home baking for myself.
Found Bosch MUM4 600 W White MUM4807GB Stand Mixer, price is very reasonable, and the way it mix is very different from the rest, as it mix in a figure 8 pattern with multi-motion-drive rather than just spinning round and round. Its unique movement will better mix the dough from top to bottom.
And it come with a stainless bowl and splash cover, so no complain. Overall really happy with this buy, do check it out when you are looking for a stand mixer at a reasonable price.

Sorry , miss out asking u what speed did u use and roughly how many did the machine take to knead to form window pane

I am doing a 500g bread dough, for bread dough you have to use the bread hook and speed no more than level 2. It takes time for the gluten to form, you cannot force it, even though kneading will help, so all you have to do is machine knead it for 5-10mins let it rest for 30 mins and on for 1 mins and wait 30mins and repeat 2 more time, so within 90 mins I knead the dough 3 times. Your surrounding temperature and humidity, amount of yeast you used do play a part too.

Hi I too have this kitchen equipment , but i failed each time in forming a nice dough like yours . The flour spread all over the bowl. I wonder if it can a small dough batch of 400 gm. May I ask what is the flour n water weight in your video mix .

Are you using the right speed? 2 is the correct speed for dough. You also shouldn’t add flour once the dough starts pulling away from the sides of the bowl. And yes, you can make small batches.
