i burnt out my kichenaid pro making 4 lbs dough, 2 loaves, the bosch has no problem making wholewheat bread, love my bosch

I make 2 loaves in my Bosch mixer every week. And I usually make 6 loaves when I'm selling it. I love my Bosch! And if you're going to spend $400.00 vs $600.00 why not get the Bosch. I have even mixed a box cake mix and it did fine, as well as only one batch of cookies. So it does great for me on regular batches of anything dough. I've had no problems with BIG batches either. I don't think you can go wrong buying the Bosch to make bread. Certain other brand starting with the letter "K" on the other hand, LOL....

I don't think the other mixers could handle anywhere near that amount, except that the Ankarsrum can do about 11 pounds, or the Famag. I think this would likely burn out the KitchenAid Commercial 8 quart mixer.

I used to make the 9 loaves of whole wheat bread all of the time when I had all of my kids at home. And I first ground wheat berries first before I made the bread. In under two hours, I could have those nine loaves cooling in the table. I have been using a Bosch Universal since 1980 and have also used a Bosch Compact since all of my kids grew up. Just got a Bosch Universal Plus because I felt so left out. I LOVE using a Bosch. My Pasta attachment arrived yesterday and today we had to take two of our dogs to be groomed and so I can’t wait to use it tomorrow. Bosch THE best mixer ever made!

Glad you enjoyed this video. The owner's manual clearly states two different values. Anyone in their right mind would not make 9 loaves, 1.5 pounds each of bread flour. Whole wheat, maybe. Just too much volume. If we would have left the bowl lid on, it would have cracked. It was getting crazy. But for the average person wanting to make 6 loaves, then no problem. We'll have to see about the Ank and what it can do. Thanks for asking :-)

Great presentation. I've had the older model Bosch Universal for 15+ years and can't say enough good about it. I find it a lot more convenient than a regular style stand mixer because it's so open, no motor above the bowl and I seldom use the ring or lid cover.. I think you missed out on one of the other key attributes with the Bosch is that it is considerably lighter in weight than a Kitchenaid which means that just about anyone can pick it up and "put it away" in a cupboard or on a shelf. Not everyone has acres of countertop, or wants their mixer to be be sitting out, or has the strength to lift a Kitchenaid.

I couldn’t agree anymore. I have both kitchenaid mixer and Bosch plus. Best investment I’ve made. Took me awhile to get my Bosch. Lucky for me I was able to get one from a small kitchen supply shop in Alaska. Had it shipped to me in California.

I like the light weight of the Bosch machine and bought it just for bread. I like the Cuisinart to make Pasta and sausage with it. you can make almost everything with that machine. one loaf of bread only takes a couple of minutes to mix and knead with it, so you can make several loaves very quickly. I still have my Kitchen aid but use it to complete the making of the sausage links and rolling out the pasta.

I have used my Ankarsrum a few times, making a variety of yeast doughs. The Ankarsrum can handle a small batch far better than the Bosch can. And, it can also handle a larger batch nearly as well as the Bosch. If I had my choice between the two, I would go for the Ank with the die-cast aluminum frame. A fully configured Ankarsrum is not going to cost any more than a Bosch with the higher-end stainless steel bowl. Plus, you can buy more accessories for the Ank. The only real drawback with the Ankarsrum, is that it cannot readily handle a stiff dough because the added flour and liquid contained in the dough ball will not combine well enough for the roller and scraper to handle it.

I have made a single egg white in my Bosch. I use it for everything! I no longer use my KA, so I gave it away. Let the machine knead for ten minutes, cut you loaves and shape. You only need to rise once in pans! Your Bosch does the work.

I'm so glad you mentioned the more powerful bosch because I was on pleasanthillgrain and the had the less powerful model. I really didn't know there was an 800 watt bosch in this price range. So thanks for the rec. Amazon is sold out but I'll monitor and order it when they get it back in.

Very nice challenge and advice. That was definitely an overwhelming amount of product to be working with at once, but it did handle it in the end. I will say this Bosch seems much better than that older version.

I have had a Bosch Universal Plus for 2 years, and with dough hook with extender or using pro dough hook you can do a single loaf all the way to 4.5 kg easily. With my pro dough hook I made 365 g firm Levain with no issues. I really like my Bosch, Prior to Bosch, I had used Kitchen Aid Pro for 15 years. Bosch is my go to mixer, I find pro dough hook does better job the dough hook with extender.

I learn that stretching the dough out and and fold will help with kneading the dough turns out great.

I have both! But I’m 69. Could not have afforded it when I was younger I got the Bosch first on my 30s and kitchenaid for retirement gift.

I use my boss for small batches of anything, all the time and I've never had a problem with it. It works great. I even with one egg white and it whips wonderfully. Watch some other demos that show you how it does small as well as large batches. I gave away my KitchenAid.

You are like me. You cant leave it alone. Every time it touches the lid you stop and put your hands into it. I think it is designed to knead against the top just like it kneads against the sides.

Hey, I give it props for not crapping out under that load. I didn't notice, did you use the dough hook extender? It's supposed to improve kneading. Also, may I ask why you replaced the plastic bowl?

Oooh, I want a Bosch! I only make bread with my standmixer. I should have had a Bosch in the first place, and not a Hotpoint/Kenmore I will look around and see if I can find a second hand Bosch. I don't bake that often, a second hand will be more than good enough. For cake batter and whipping cream or eggs and such tasks, I find the handmixer to be the easiest and best. So I don't need a standmixer for that. What I need is a better bread machine, and you have now demonstrated that the Bosch is the ultimate breadmaker! Thank you for a great video! :-)

Not so fast....with due respect to the Bosch loving community, we did this test. There is a segment of the population, the contrarians if you will, that believe the Bosch can only make certain recipes, lest they will just spin and spin (and not properly knead the bread). We just piled on with those people that have added more dough than it is rated for, and it did a nice job. We already proved it can't make Julia Child's buttery dough (too slippery for the standard plastic bowl). So we would have to make various recipes to fine tune which ones it can do and which ones it can't. Some people LOVE the Ank and think you don't need anything else. So if you are going to use a similar dough (and lots of it), it will work. If you use less dough, it may just spin on you and not really knead.

Aha, okey, thank you for the great information. I didn't get the Ank to work with a large bread dough. You are supposed to use the bread hook, and that doesn't work very well. I'm not sure if I have tried that spinning white thing, but I think so. I have to try again and see if I can get it to work properly. It is an old Electrolux Assistent, exactly the same as the Ank. Just not as fancy looking. My dad had read the instructions and told me what to do. I think I should not have listened to him. I found the Ank to be the worst ever machine. So it was stuffed away. But, I will try again. It is seriously way more practical in use than a planetary where you can't get the flour thrown in without making a mess. I think that spinning Bosch maybe could knead even the most slippery doughs in the plastic bowl, if you crank the machine up to full speed. I know you are not supposed to, but if that is the only way, well, then. I do that all the time with my planetary one. Otherwise the dough can start creeping up the hook, or just cling to the hook and spin around, without kneading. So I crank up the speed until the dough gets forcefully thrown off the hook. But I'm not an instruction reader. I think I have never read the instructions that came with mine.

@@EricLearnstoCook I now have a Bosch, and I can tell it is fantastic! But not for small recipes. I bought this so called dough hook extender, but have not got it yet, so I guess I will find out how it then can do small batches. Instead of tweaking the Julia Child recipe, have you tried the dough divider? That one really works in keeping the dough from spinning around the bowl. The Ank is supposed to be one of the very best, but I can't find out how to use it correctly. Last time, it did not knead at all. I have used it quite lot in the past, with the dough hook (it is my parents machine, actually, and I made bread for them) I had to stand beside it all the time to knock the dough off the hook. Sometimes it came out of the bowl. But we have maybe operated the Ank incorrectly all the time. Others can make it work, so I guess we did something wrong. I like the Bosch 100 times better, since the bowl is standing still and the hook spins around. I don't have to watch the Bosch work, I can just put the timer on and leave it to work (if the batch is big enough), and it will knead whatsoever. I tried a big batch of 4 loaves, one was 3,5 kilo of flour, the other was 4 kilo of flour (we have big loaves in Norway, not the small american loaf size). I tried one batch with and one batch without the dough divider. And it did knead better with the dough divider. I watched the whole time on both batches, and it was a visible difference. And my Hotpoint is out for sale. I had a really hard time cleaning it. The dough creep and flour clouds really can dirty down everything. And now it is so clean and shiny that I want to keep it. Hotpoint is a very good looking stand mixer. The bowl is the most sturdy and thick I have ever seen anywhere. The steel bowl for the Bosch is pure and genuine junk in comparison. Thanks for watching. I"m thinking the KA 8 quart can handle around 8 or 9 pounds of dough, which is more than enough for most of us. Obviously, if you want the machine because it is more durable than the 5 or 6 quart machines (or have a need for the larger capacity) then great. I think it is overkill for most people, but then lots of people are breaking their 6 quart machines. So that seems sad. I'd be interested to know the reliability of doing 8 pounds of bread dough every day (or every other day) compared to the Bosch. Obviously, I'd be scared to make that much bread in a smaller KA. LOL! Glad you enjoyed this video. Hope your 8 quart continues to do it's job. That is great.

I would make sure it is not just how many, but how often. I burnt out my Kitchen Aid motor doing one batch of pizza dough every week for 2 years. Upgraded to a Bosch. Still have my beautiful red Kitchen Aid but it doesn't work...

For those who want to buy only one mixer, I have a Bosch Universal that I purchased 16 years ago. I have one child left at home and I use my Bosch for 1-2 loaves of bread. :-) Amy, do you know if this stainless steel bowl fits the older Bosch Universal?

Dear Amy, what do you think of the Bosch MUM5 (not 4) or the OptiMUM (if they're on sale in the U.S.)? I personally switched to the MUM5 and the it easier than the KitchenAid.

I have the U.S. version of the compact. I like it. It is a really lightweight mixer which is great for those looking for something that is easy to move around. They don't sell the OptiMUM in the US. I wish they would! I've wanted one of those for years.

I don't know if I said this before on one of your youtube videos I've been madly watching I just ordered the Bosch Universal Plus and got the Baker's Bundle, the spiralizer and the hand crank as part of a special they are having which sadly is ending October 4th, and I got all of it for less than what it retails for just the machine..am so excited that I've already stored my Kitchen-Aid, which will probably go to my daughter later, and made room on my countertop for the Bosch which hasn't even come yet lol.

Wow Amy!!!!! I thought that with all of that dough, it was putting too much pressure on the Bosch Universal Plus & it was going to kill your machine. Now I would definitely like to see you do the same test on your Ank.

The Bosch had no issue with the weight. It was the bowl lid that added the friction. As the bread was kneading, it was actually rising a bit. We heard some early cracking sounds from the lid and removed it so we wouldn't break it. Just too much dough. Once we took the lid off, much reduced friction, but then the dough started to go up and get out of control. The challenge was a success, but clearly pointed out that it was too much dough. The manual recommended 10 1-pound loaves, so I'm guessing that would actually fit in the bowl. LOL!!! Yes, would be interesting to see what the Ank can do.

I think 9 of what I consider a regular loaves of bread is too much for this machine. The Ankarsrum might handle it, but best to bump up to a spiral mixer like a Hakka (China, @$1400) or a FAMAG (Italy, @$1900). As this quantity of bread in one batch is almost certainly being sold, a mixer of this capacity is a good investment.

I bought a farberware countertop oven from Wall Mart ,the grate for baking on is exactly 13 inches US ,Most box cake mixes call for using a 9X13 pan went to Walmart $25tree and looked for a 13 x9 pan they all measured over 13 inches the oster oven is the only one that that size pan will fir in make a video if the farberware oven mix your cake batter and put in pan then the only way the pan will fit is at an angle but here the batter runs out of pan bob Urbahns

I'd have 9-1-1 on speed dial if I put that much dough in our KAs. I think the Commercial 8 quart can handle around 8 or 9 pounds of dough. They love to use "flour power" in their recommendations, but rarely like to talk about pounds. Guess they figure the home cook can understand "cups" but not pounds? We have a cook book that talks in pounds and grams. Very useful when doing these large tests when you do the baker's percentage calculations. Let's just say, Amy let me do the math for this video. :-)

I love my heaven duty KA. It has a highpower motor. But I wouldn’t dare make that much dough. I’m good where I sit!! Hahaha. I’d let you do the math for me too. I hate math. It isn’t like I can’t do it I just don’t like it.

It doesn't get bogged down because that's not it running at its capacity. I could make a KA either die, or overheat and need a 20 minute rest with the 57% hydration pizza dough I make. They work well enough if you use it well under capacity. Or don't use it to make large quantity more than once every blue moon. A 6.5qt Bosch will run circles around even the 8qt Kitchen aide lol.

Ooh that Bosch mixer looks great but it’s definitely bogging with heavy dough in it. Wow the dough is really hard to mix in with the flour Amy cause there’s little to no room in there but that’s a lot of dough . Very interesting review thanks hun xx

Thanks Angie. Glad you liked it. 14 pounds of 60% hydrated bread flour is a lot, and the Bosch had no issues with it, other than running out of room in the bowl. The manual recommended 10-1 pound loaves as a maximum. I'm guessing when it mentioned it can handled 12-14 pounds, it may be that whole wheat grain bread is denser, thus heavier and will fit the bowl. I told Amy that we are asking for trouble in using this flour in that quantity. I'm thinking a 'normal' amount of dough would have mixed much better. What's funny is that Amy's 8 quart commercial and that Hobart in the background are only rated at 4 pounds of flour (which would equal around 8 or 9 pounds of dough, certainly less than the 14 pounds we just dealt with). Sorry for not using metrics in this comment, but we did in the video :-) Glad you found the video interesting. We were just doing a stress test of the Bosch. Surprising, this was one of the better dough balls it made. It really hates small batches, at least in the plastic bowl. The stainless steel bowl does much better kneading bread. I don't know why. The owner's manual does not say anything about special process to make bread, but the Bosch Lovers really defend this thing. Too funny.

Amy, when you were adding the last of the flour to the full bowl, Lucy & Ethel's bread-making episode came to mind. 😃 This is a terrific review, thanks for doing it. I wonder how the Ankarsrum would compare, kneading a huge amount of dough. Between the two, I think I like the Ankarsrum (taller bowl, quieter motor, and I like the roller/scraper system). I certainly hope Eric likes toast! BTW, I can't wait to see your review of the Hobart N50 on the counter!! Thanks again.

I don't think that's a Hobart N50 in the background. A Hobart is geared, that one looks like it has a solid-state speed control. I would like to know what it is, though.

There is a little fin you can use with the bosch ($2) that. Keeps the dough pushed into the machine. I think it would work with your model

Dianna A Absolutely. I have had mine for 40 years. I make a lot of 100% whole wheat bread, which some machines find difficult. The bosch makes it with no problems and it is still running strong. I did have to get a new bowl this year. How many brands can say they are 40 years old and you can get new parts in 3 days! Love it.

A very good, common sense review. But if you were to make 6 loaves of bread on a daily basis with the Bosh, I am sure the motor will eventually wear out under all the stress. I would agree, it is better to buy both. But I would start with a KitchenAid and make several smaller batches, and buy the Bosch later when funds are again available.

The motor only strained because as the dough grew, it came into contact with the bowl lid. The Bosch has a pretty heavy duty motor and transmission. I think 6 loaves would be a fair amount for those with large families that make their own bread on a daily or every other day, basis. I'd be scared to do this in the KA. The 8 quart commercial and pro7 quart can do about 8 or 9 pounds of dough, I think so that would be your 6 loaves. If I'm a small bakery, I'd demand the commercial to work everyday, so I'd think it could do it too. But I wouldn't expect that out of the 5 or 6 quart machines. ehhhhh. If a baker were serious enough to make that much bread on a daily basis, then the purchase of a Hobart HL200 would be a better investment. I think for most home cooks, the KitchenAid 8 quart commercial would offer the most versatility. You can always do those 9 loaves in two two batches, and still get the same result.

KitchenAid would void your warranty for kneading on anything other than Speed 2 and for more than three two minute sessions with pauses in between. That’s grossly inadequate in my view, so KitchenAid is off the list for me.

After you got all the flour into the machine you should have just let it go instead of constantly stopping it and looking. It looks like a great machine. The motor wasn't bogging down, it has a transmission that slows it down when it comes under load.

Thanks for watching. yes, this machine can handle a lot of dough. The manual shows it supports a max of 10 pounds of dough (for 10 1-lb loaves). This challenge exceeded that. (we did 14 pounds of dough). The problem is with too much dough, if you leave the plastic lid in, it's under pressure and can get damaged. If you take it off, the dough creeps up and doesn't get kneaded as well. So best to stick with what the manufacturer recommends. But with all these people out there claiming it can make 9 loaves, we wanted to see for ourselves if it could make 9 1.5-pound loaves (because who wants only 1 pound loaves???). So it can do it, but isn't pleasant. LOL.

Clearly overloaded. A little bit??? It was about to stall out. Didn’t look like it kneaded. It didn’t do it. It didn’t even fit. No mention of how hot it got. That’s a crazy amount of bread for any home. How about trying a reasonable size. I’ve seen reviews where the Bosch cannot do single loaves. All the tests show giant loads. What about a normal or small size.

Amy, I watch all your reviews and you know it all! Can you tell me how does the Ank rate compared to the Bosch? I have not seen a head to head challenge of these two mixers. Is there one out there or is one in your future?

I think again it's going to depend on what you're doing. The Ank has a limited size 3.5qt bowl for the pastry / whisk style stuff, and has different style attachments for slicer / shredder / foodprocessor that's more like a salad shooter. But it has an even bigger bread / dough bowl at 8qt. I think it's also quieter, but also more expensive base to base. It's complicated for the Bosch price comparison, do you want to pay up for the stainless steel bowl? Do you need a longer warranty? Do you want to wait for a sale?

If I was looking for a good all around mixer that will be used mostly for pizza dough in the range of 1500-2500 grams flour per batch. Occasionally cookies or breads. Which would you prefer, the Ankarsrum, bosch or Kitchenaid 8qt commercial? I'm having a very hard time deciding. Thanks!

Get the Ankarsrum. It is a legacy mixer, meaning that your children and grandchildren can use it long after your time on earth is up. I have had mine for eight years. It took a while to learn it (learning curve). But now it just sings for me every time I use it. It is a work of art and has been used in Sweden for 50 years or more. It is better to pay more for quality and performance up front than to keep on paying and paying and paying along with the frustration of having an inferior mixer.

Also, on the Ankarsrum, It took me a few years before I had enough courage to invest in the other attachments that go with this beauty. So now each year I purchase another part. Is the Ank any more capable of small and large batches than the Bosch? Been hunting high and low and can't source the Bosch anywhere in the UK, but Anks are available in one or two places. Currently on my Kenwood Prospero I'm making yeast dough batches as small as 250g/1 3/4 cups (approx), but I am also looking to to find a machine that can cope with larger batches (at a min 1.25Kg/9 1/4 cups) and maybe as my skills develop larger batch sizes still.

I think the Ank is a really good machine that you can't go wrong with. I'd have to see how it does with smaller recipes. The Bosch "can" do smaller recipes, but we've had no luck with using the plastic bowl that it comes with when kneading bread. It just slips and goes in circles. The stainless steel bowl does a better job, but costs more. I know we did a test/review on the Ank a bit ago, but will likely need to do another one soon to see if it can do smaller and larger batches.

Squidgy Bidge from watching the Ankarsrum work, it is capable of doing small and large batches. Unlike the Bosch and other stand mixers where there is whisk, flatbeater or dough hook with the Ankarsrum the stainless steel bowl is the mixing instrument. There is also the smaller mixing bowl with the hub.

Cheers bud. Yeah due to that roller mechanic those are certainly my thoughts on the Ank's capabilities, just would love to see it confirmed in a review by someone. I hadn't realised that it comes with a smaller bowl (or I had forgot, as I think now I remember someone mentioning that in a review I watched). I've seen one review where the lady said it was capable of 500g batch sizes for dough making, but I've not seen any reviews of whether its capable of even smaller.

Amy....just watched a "classic" Paula Deen segment where she made a coconut cake in on old style Sunbeam mixer. Fun! Do you have one in your collection? Can't remember. Do you get excited if a recipe calls for several minutes of mixing time? I know you understand!! Haha.

Thanks for watching. We had a Sunbeam mixer from the late 1990's where the bowl and the beaters spun together. A recent test shows the bowl no longer spins on it's own. We no longer have the Sunbeam. Amy gets excited when the bread comes out the way it should. She thinks the machines are sexy and all that. She likes to see them work. But there is nothing better than taking a blob of dough out of the mixer and not having to work it much by hand. That really makes her happy. I take it you love mixers too :-)

It started to do a first rise because we were filming and took too long to get it into the freezer. So it didn't complete a first rise. I hope that helps answer your question.

The rolls and bread looked delicious. I do disagree with your comment re: small batches. I have the Bosch and I routinely make small batches - cookies, muffins, 2 loaves of bread, even egg whites with just 1 or 2 eggs...and it does a fantastic job. I've had both the tilt and bowl lift Kitchen Aids...for me, the Bosch outperforms KA. And with the poor quality that KA is producing recently i.e. not using metal gears, removing the spring for the beaters, etc. I would stay away from KA. :-)

Thanks for watching Gary. In general, we've had nothing but bad luck with the plastic bowl making two loaves of bread. It just spins and never develops the gluten, even with the extenders. The stainless steel bowl somehow does a better job. Nothing in the manual has any special instructions for bread, other than the recommended recipe, amounts, and speed. Some forums accuse newbies to not knowing how to adjust the hydration ratio to make it knead better. I fully agree that you need to know how to operate your equipment, but if you must adjust the hydration percentage to stop the spinning, then the manual needs to tell you and they need to warn you somewhere. KA never has this issue, and I don't think the Ankarsrum had an issue either. All the KA ripoffs (all other planetary actions) never had issues like that. So that is my thoughts on it. Not that the Bosch can't do a good job with small batches, but that you need to learn to adjust your recipe (and it isn't published anywhere, other than in forums). I liked the Bosch in our previous test as I think it's built like a tank (motor/transmission). The KA is much weaker and can't compete with the volume this beast can work. I agree with avoiding KAs for quality issues, or at least to use them within the return period. I like our older KAs for how they work, but would never do three or more loaves of bread. The Commercial 8 quart can handle 4 pounds of bread flour, so I think that means it can do around 8 or 9 pounds of dough, which is a little less than the recommended "10 - one pound loaves" the Bosch owners manual recommends, and is much less than the 12-14 pounds (whole wheat flour?) dough. I'm not sure why you would do 1 or 2 egg whites in a 6 quart bowl, but if it can do it, then great. We would do it in a smaller bowl, like the 4.5 KA Classic Plus or use a hand held beater. We do like to do the whip cream test with a cup or more of cream, and it handles that fine.

I found the 14 pound dough test interesting. The motor only bogged in that the lid caused the bogging. The motor was fine when the bowl lid was off. The problem was, the dough started to go everywhere. So If we had used less dough and not needed the lid, then I doubt it would have bogged. I'm sure a 2 or 3 would have been fine for the speed.

Frankly, I don't know how many home cooks would on a regular basis want to make 9 loaves of bread at one time anyway? It is nice to know the Bosch can do it but I don't think realistic in every day life...maybe I'm wrong. It is great that it can also do 1 or 2 egg whites or a cup of whipping cream...just goes to show it can handle small and large quantities thereby not requiring another mixer if a person does not have the means to have more than 1 mixer. As for using a hand held...the last thing I want to do is be holding a mixer when baking :-) In this case I would bring out my vintage Sunbeam stand mixer!

I don't doubt the motor will be able to handle it, my only concerns is the size of the bowl. That Stainless steel bowl looks awesome. Grams are a unit for mass not volume. So you don't measure water in grams, you dout in ounces, litters or cubic Centimeters. Your advice in the end is very good. Not biased, based on needs of the cook.

they prolly mean 10pounds is the amount of dough that will fit in the mixer bowl and get properly kneaded top to bottom, but the motor and the bowl can actually hold 14 pounds of bread

The Farberware that we reviewed did a decent job on dough. While we were lucky to get it in the store for $50, it is available online for around $100. That is probably the cheapest mixer that can make dough. How long will it last if you use it three+ times a week? As long as you don't overload it, it may last a while. But there is no way we can predict the longevity of any machine. Amy was noting that some machines like the Bosch don't seem to struggle with large loads, so they should be able to handle smaller batches for a long time. There are many complaints about KitchenAid in recent times that is too bad. We've been lucky with ours, but we don't use it for dough 3 times a week, so there is no comparing. Have you looked to see if you can find a local used reliable brand in your Facebook Community or CraigsList or something? Otherwise, you can try the Farberware.
