I bought a compact Bosch, since I only use one loaf of bread every three days. I used it for the first time today. It did a good job of kneading the dough, but I made the mistake of letting the dough rise twice. Next time, I will only do one rise before baking and I think my loaf will rise higher and will turn out better. Thanks for the demonstration on the large Bosch mixer, everything you baked looked really nice.

I'm so glad that you like the Bosch. I thought you would. When I mix my flour in, I keep it on # 1 until all the flour is in the bowl & then put it on #2 or #3 to complete the kneading. I still raise my bread twice & have not had a failure yet. Never add extra gluten or dough enhancer. I always use whole white wheat flour that seems a little heavier than white flour. I was just able to purchase a Bosch mixer... wanted one since I saw this video 6 years ago.... and then when I act looked to buy one they were out of stock all over for so long because of the Pandemic shortages... I decided to start searching again when I was convinced and fed up this past week that my Kitchen Aid was unable to handle what I needed to without making multiple batches.... and low and behold I nabbed one! Had to watch your video again... can’t wait until mine arrives in a week or so! I’m so excited!

I just got my Bosch today. I have been using a kitchen aid for a long time. It actually vibrated So much when I was making bread it fell off the counter and hit the floor. It definitely struggled after that and just wanted to get through the holidays. I saw the Bosch and decided to try something new. That video was beyond impressive. I have a little hamilton beach stand mixer that can make up to 1.5 lb of dough at the most without climbing out of the bowl, so seeing how well the bosch mixes large batches is nice. I will definitely consider this when I want to upgrade!

This is the exact same mixer I want to buy too. My hands get sooo tired of the kneading, what with the aches and pains I suffer with. This is the perfect solution for me. I hate, and never had one, the Kitchen Aid mixer or any like it because the mixing mechanism is in your face and you can't see down into the bowl. And I remember you shared a video of your difficulties with the Kitchen Aid breaking down. I like the idea of the motor being underneath this Bosch mixer and the torque is fantastic for all size loads.

For all the recipes and cooking you do Noreen, this is right up your alley and definitely the machine for you!!! BRAVO! For now I am still tickled pink and rainbow colors with my KitchenAid.... i love my bosch too. glad it works for you. i make an all purpose flour with spelt, brown rice and barley. this mix makes wonderful sugar cookies using your cookie mix. i have filled some with ice cream to make i/c sandwitches. yummm. thanks for all you do for us.

Noreen, I have a ka which I have had for more than 30 years. I have made bread using it for kneading but didn't like the sound I was hearing. After hearing your video about your experience I have not tried it again. I need a good bread machine. I can't use my hands for kneading anymore thank to Arthritis. I have been wanting a Bosch for a number of years now. I am so happy to see that you have one and that you recommend it. I have been watching you for years and trust your opinion. Thanks.

I just watched your two videos about KA and how disgusted you were with them. I had the same experience that you had with your yellow. My husband took mine apart and the gears were stripped. Mine would run at top speed on #1. I too contacted KA and was told the same thing as you about shipping, etc. Mine did this right after the warranty ran out. I ended up doing a ton of research about stand mixers and found the Bosch Universal Plus which I put on my wish list. Several years later (2019) my husband bought the BUP and I couldn't be happier. I've made bread, and homemade butter so far. I LOVE your channel. I love your friendly, yet authoritative style. Thanks for all your videos and thanks to your hubby for filming it all for us. Janis

I was able to get one for a little over 200 on Amazon. they had a one day sale and I was so excited. I have been wanting one for years. I love it. Kichenaid's aren't made like they used to, I have my mom K5SS that she bought in 1984 after her old Sunbeam she had for years died after yrs of holiday baking(the beaters broke), she never had any issues with her kitchenaid.

My brother was a serviceman for KitchenAid and he told me my new machine is a Domestic Industrial: next step up in power is an industrial model for food service establishments. It is huge and I bought it because my tilt-top KA was too small for my Christmas baking. Just told DH that when my KA dies, I am getting a Bosch. Thanks for the video!

+CleverEwe I truly love my Bosch and will never go back to KA. That being said I still do have my yellow KA and use it for making cake batters sometimes, just to give it a go from time to time. However I have recently purchased the new cake paddles for the Bosch as well as the bowl scraper so I don't know that the KA is going to get much use this holiday because this Bosch Universal is a work horse!

Love my Bosch. It handles the toughest jobs with ease. I introduce my flour with a grinding sifter. I also spray my bowl with non-stick spray before àdding my wet ingredients, it helps (sometimes). That Carmel ring looks awesome. Thanks 🙂

Nope! This is one of the best perks of this mixer. When you use the instant yeast, you just knead and shape and rise for 20 minutes before baking. I have made all the dough for the breakfast rings, the ridiculous amount of dough here as well as loaves of wheat and Italian bread that only were mixed and kneaded one time. It has to do with the wattage, strength and power of this mixer. You knead for longer because it can handle it and you reduce your prep time by 1 hour or more depending on where you live and the weather conditions! I love this thing and cannot say enough about it!

Noreen's Kitchen This is really amazing. I can't wait to use mine. Just wondering how I would go about freezing some of the dough? This machine can certainly handle big batches and I'm thinking perhaps freeze some of the dough. It will certainly help if I don't have to knead dough for bread every day. More time with the kiddies. Any suggestions how to freeze the dough and also on how to go about it when defrosting and getting it ready for baking?

Eleanor M I really don't recommend freezing dough. the dough in the grocery store is made on a commercial level and has lots of additives in it to keep it from exploding in the freezer. Additionally it is flash frozen and exposed to super cold temps in order for it to freeze without rising. It is better to get the dough hook extender which is very inexpensive so you can make smaller batches of dough with your Bosch. It will allow the machine to knead one loaf's worth of bread or anything less than 4 loaves worth. I really don't recommend freezing dough for those reasons.

Eleanor M Dough enhancer does not extend the shelf life of the bread it makes the bread softer, easier to knead and gives it more loft making it more like store bought bread. The only time to use a dough enhancer such as vital wheat gluten is when you are making a bread that has more than 50% whole wheat flour. A dough amendment such as dry milk powder, citric acid, ascorbic acid or potato flakes will make the dough more delicious and beautiful. as in the case of the acids will give more power to your yeast. If you are making 100% whole wheat flour bread then I recommend using 1 tablespoon of vital wheat gluten per loaf along with 1/8 teaspoon of ascorbic acid (vitamin c powder) per loaf as well, add the gluten with the flour and add the acid to the yeast and sugar mixture before your form the sponge.

Hey Noreen, I got myself one of these a couple of years ago. there are weeks at a time when it is up on the counter in the kitchen doing all kinds of mixing - you should see it deal with Christmas (fruit) cake! AMAZING. I also love how easy it is to clean, and the lip on the plastic bowl makes it REALLY easy to handle when you are pouring things out.... It takes up a lot of my limited counter real-estate, but I sure am happy with what it can do....

Hi Noreen, I've had a Bosch for 4 years now and grind my wheat. Try the whips for whipped potatoes and for chicken salad; cut some cooked chicken breasts into 3 pcs each while warm and whip - I make this in Summer for the kids to make sandwiches. About 35-40 years ago I had a Bosche mixer and made whole wheat bread about 2-3 times a week. I used to bake my breads in juice cans! My kids loved the round bread for their lunch sandwiches because no one else at school had that kind of sandwich 😁 I think I’m ready to buy myself another Bosche! I sold my old one when I started working full time and stopped making bread so much🥴.

Good luck finding one. Since COVID shut everything down and these are made overseas there has definitely been a shortage. Since everyone was home bread baking was a popular hobby. Last I looked on boschmixers.com they were on back order from the manufacturer. Love the round bread idea! My mom also did that when I was a kid and to give as gifts at Christmas

The Bosch Universal Plus is widely lauded for its ability to easily knead copious volumes of stiff bread and cookie doughs, while its ability to handle cake batter, meringues, whipped cream and other comparatively "light" jobs seems to go unrecognized. If you ever have the opportunity to demonstrate your use of the Bosch for the lighter jobs, I would be greatly appreciative. Best.

That ball was so big I don't know how you wrestled it out of there! Great mixer, like that direct drive from the bottom. Saw that years ago as a built in for a kitchen counter so you could set different appliances on the base.

This mixer is an absolute monster. Nothing seems to bother it - it just keeps on going and turning through the thickest material. I've seen a few of these bread videos now, and they all just power through with the Bosch! I have an old Kenwood Chef from the 70s but it hasn't been used that often, maybe once or twice a month to make bread or butter/suger/eggs creaming for a cake or the occasional paavlova.. The thing is still going strong, though and you also have had a good run with your mixer with 35 years constant use! They don't Make things like that any more - they have their genius engineers build in faults and weaknesses so the machine will only last a limited time. Of course, they have to make money to keep in business, but if you get any appliance made in the past decades to last for more than 10 years, you have a good deal.

Thanks for your video. I have been looking at this mixer for about 6 months now. I'm just waiting for a really good sale price on this one. I have a KA Classic Plus 4.5 quarts that my husband gave me 5 Christmases ago but it's really struggling on kneading a dough and I thought few times I was using it that it would croak because it had that smell of a burnt wire lol. Though it works really good on cake batters and meringue. I love making bread from scratch but I'm working full time now that I don't have time to knead dough by hand anymore and when I do now, it hurts my fingers since it's been a while since I made bread by hand. So, this machine will really be a good one.

ok Bosch is now on the top of my must get list. I don't know I"d ever want to make nine loaves of bread LOL but that would be wonderful, think i'll go with the compact size they offer!

My Kitchenaid did pretty much the same thing. They replaced my brand new one with a refurbished one and it has performed flawlessly, but I think i was lucky. The right hook on the bowl did fall off on just regular cookie dough. I have a 7-qt Viking, which I love, my 6-qt Kitchenaid, and a smaller one. I also just gave my daughter her grandmother's Kitchenaide from the early 1970s, which runs flawlessly, even when left in an open shed outside for 3 years. Could not believe it still worked. I don't know what the deal is with the newer one like yours and mine. Also had a Also have an Assistent, which i don't use much. Like the Bosch though. Might have to copy you after I justify another mixer..

Wow!!! Bosch is fabulous... Love this. What a great machine... Noreen take a bow, you did a fantastic job (meaning selection of the Bosch)... it appears have enough power for you and anyone that has a big family. Hip Hip Hooray!!! :-)

I had just bought my Bosch mixer before I saw this video. Now I am really impressed. I would like to know how you divided your dough for the 9 x 5 bread pans??? If it was by weight? How much per loaf? I do use your perfect sandwich recipe and your great bun recipe. Both have served me well for two years. Thank you.

Yes, I use a scale to weigh out my dough. I like to use 1.5 pounds or so. 24 ounces per 9 x 5 bread pan. This will also work for a long pullman pan as well.
