Schaum = foam in German. Pita is the eastern word for 'cake' or 'pie' layer below it. So that cake has a localized name - Šampita (Schaumpita). Basically it's a mix of east and west as it is usual in Bosnia. As you saw, the "East meats West' spot is very close to that bakery so it's only appropriate to eat a cake that has mixed two worlds in one :)

It's also ok to eat the pies with your hands. Krompiruša (potato pie) is usually a bit dry so you can eat it with sour cream. I prefer ajvar. Makes it even better.

Burek is a pie with meat, all other pies (with potatoes, with spinach, with cheese and...) are not called burek, but pie with potatoes: = krompirusha, with spinach = zeljanica, with cheese =: sirnica, etc...😀🇧🇦❤️👌

The Burek being prepared straight like that is just how its made at scale in shops. No one makes it like that at home, this is basically industrial grade burek, it takes less space in the oven and on serving trays, and serving sizes can be controlled better.

Bosnian pies are more time and labor intensive compared to versions from other Balkan countries. The reason is these pies originate from Bosnia
