Rolling citrus absolutely gets more juice. Breaks up the fibers and juice cells. Also the release of oils from the skin gives you a nice aroma.

I roll my limes every time! It definitely softens them which I think allows you to extract the most juice!

Fantastic episode! My wife and I are big fans of Duke & Lola so we were happy to see you all get together, even if poor Duke couldn’t find a place to stand without knocking his noggin 😁. We also love how the tale of the “Palmer Pour” of 151 rum has now become the stuff of legends and is part of the lore of the Breezeway 😅!

made this tonight, and was pleasantly surprised at how tasty it is. ours came out more pink than brown, but that must be because of the grenadine we used (NOT Rose's, but still, very vibrant red).

I c9uld be wrong but I think the grenadine is a a pour over at the end that helps gives a layered look so more like a hawaiin sunrise

Rolling citrus breaks up the pulp to a degree allowing easier extraction of the juice. It also expresses some oils from the peel giving your bar top surface a refreshing scent, and possibly damaging the finish over time.

I made this cocktail a few months ago and it was a bit more pink in colour. I guess it depends on the brand of orgeat and grenadine used. I agree it’s an unusual taste to many Tiki cocktail but not bad.

I’m having a Hawaiian Sunset while watching this Hawaiian Sunset! I like it - more complex than I thought it would be. Curious about the grenadine though- your recipe calls for three teaspoons, while the version of the total Tiki app it calls for one teaspoon grenadine. I’ll have to try it with three tps next time.

I used to do "the thing," but now what I do is trim the ends and cut the lime the long way (with the grain instead of against the grain). It's a lot easier to juice that way, and you get more juice, because you're not trying to squeeze the lime against all of those fibers that make up the internal structure of the lime (the grain). Also, if you want a lime wedge for a garnish, just cut however many wedges you need before squeezing.

So I juice my limes like this.. first WASH em good, then cut a lime in half and juice as normal. Afterwards take those juiced shells and stack em on top of each other in your squeezer and juice it again. You end up getting 1/4~1/2oz extra juice plus more of those tasty oils from the peels 🍹
