It’s so wonderful to see how traditional southern Italian recipes are still popular and flourishing. Laura’s braciole is to die for. She is a natural at cooking and in front of the camera. Che bellisima!

Can't wait to try this recipe. My Dads aunt I remember added raisins in her meatballs and her braciole. My favorite of Laura's is the Chicken Francaise. I tweaked it just a little and it's even better then the resturants.

Thanks Laura . . . this was to die for in our house growing up!!!! My mom's was simpler, stuffed with just cheese, breadcrumbs, onion, a slice of prosciutto (or bacon), parsley, and seasoning. Every Sunday she made of BIG pot of pasta gravy with meatballs and braciole . . . to feed a family of 12. Have to give yours a try :) CIAO!!!!

I will make this today, Christmas Day 2018 with my daughters. We are having manicotti and stuffed shells. Pairing the beef braciole and pork braciole with cheese and parsley thin sausage. Thank you so much for teaching us. 😢❤. Merry Christmas to you and your family! 🎄🕊🎄

Hi Laura! Love Braciole so much.. I dint read all your comments so I just want to pass a tip along to you an old boss taught me. I was a cook at an Irish Pub cutting our corned beef to make sure it was always cut correctly. When you had your flank laying out and the grain was correct, if you lay your hand on it "you cut your fingers off" if its laying correctly! If its incorrect you don't. Silly, I know.. but stuck with me always.! Blessings..

I ate something very similar at a spanish restaurant but instead of hard boiled , it was shrimp. And the roll of steak was a little smaller than a corn dog. There was a sause/gravy with it. Best thing i've ever eaten. I wish I knew what it was called.

Laura, have you tried using round steak or steaks cut from a round roast, top, bottom, eye, doesn't matter. Becomes much more tender than flank. Cheaper too. Another thing about using round steak is that the grain of the meat is facing you rather than running horizontally which also makes it more tender.

I like your procedure because you use one single large piece of meat to make a long roll. Others use smaller pieces to make individual portions. That's OK, too. But I like the look of yours when it is sliced and served. I will definitely try this! Thank you.

Question - I'm Italian, my girl is not. She does not like red sauce (I know). I grew up with my ma simmering the braciole in red sauce for hours. After cooking the braciole, what can I simmer the braciole in that can tenderize the meat?

@jamescampolo78242 ай бұрын
I learned to make braciiole from my Mother a long time ago. Similar to yours but different. She used round steak, pecorino Romano cheese and Genoa salami. (the rest is the same). I don't know if it is Sicilian or Calabrese or just what you got. Most Italian cooking is, use "just what you got". And recipe, what's recipe? Just put it together with what you got and celebrate what you got.
