⬇️⬇️English recipe follows ⬇️⬇️ 紅燒豆腐煲: 材料: 硬豆腐2磚 冬菇仔20隻 蝦米2湯匙 乾蔥頭6粒 薑1舊 芫荽1棵 紅蘿蔔半個 蔥1條 臘腸2條 處理: 1. 豆腐洗淨,1開8塊。 2. 薑,去皮,洗淨,切片。 3. 乾蔥頭,切兩端,去皮,洗淨,切片。 4. 蔥,切兩端,洗淨。 5. 紅蘿蔔,去皮,洗淨,切片。 6. 蔥白,切粒,蔥尾,切段墊煲底。 7. 臘腸,切一片片。 8. 蝦米,浸一浸水。 9. 預備醬汁: a. 蠔油1湯匙 b. 生抽1湯匙 c. 老抽1/2湯匙 d. 水100毫升 e. 糖2茶匙 10. 預備生粉芡,生粉2茶匙加水。 烹調: 1. 大火在鑊中燒熱2湯匙油。 2. 放豆腐,大火煎。 3. 豆腐一面煎至金黃色,反轉煎另一面。 4. 煎了大約2分鐘,夾起豆腐。 5. 爆香薑片及乾蔥頭。 6. 加入1茶匙油。 7. 加入臘腸、蔥白及芫荽頭。 8. 加入紅蘿蔔及冬菇。 9. 加入醬汁,及100毫升水。 10. 加入豆腐。 11. 加水至材料表面,冚蓋。 12. 另一邊,燒熱煲仔,加入蔥尾墊煲底,開中火燒熱。 13. 大概炆了5分鐘,加入蝦米。 14. 逐少逐少加入生粉芡,煮至收汁。 15. 轉過去煲仔,滾起,熄火。 16. 放芫荽在上面,完成。 Tofu claypot with dried seafood: Ingredients: Tofu (hard) 2 cubes Mushrooms (small) 20 pcs Dried sea shrimps 2 tbsp Shallots 6 Nos. Ginger 1 No. Coriander 1 No. Carrot 1/2 No. Green onion 1 No. Chinese sausages 2 pcs Preparation: 1. Rinse tofu. Divide one tofu into 8 pieces. 2. Ginger, peel, rinse and slice. 3. Shallots, cut both ends, peel, rinse and slice. 4. Green onion, cut both ends, rinse. 5. Carrot, peel, rinse and slice. 6. Prepare the sauce: a. Oyster sauce 1 tbsp b. Light soya sauce 1 tbsp c. Dark soya sauce 1/2 tbsp d. Water 100ml e. Sugar 2 tsp Mix well. 10. Prepare tapioca sauce, tapioca sauce 2 tsp with 20ml water. Steps: 1. Heat up 2 tbsp oil at high flame in wok. 2. Put tofu, fry at high flame. 3. One side of tofu has been fried into golden yellow. Flip over to the other side. 4. Have already fried for 2 minutes, pick up tofu. 5. Fry ginger slices and shallots for 1 minute. 6. Add 1 tsp oil into wok. 7. Add Chinese sausages, green onion cubes and the root part of coriander. 8. Add carrots and mushrooms. 9. Add sauce and 100ml water. 10. Add tofu. 11. Add water just cover up the ingredients. Cover up the wok. 12. On the other side, put green onion in the pot. Heat up at medium flame. 13. Have already braised for 5 minutes, put dried sea shrimps. 14. Add tapioca sauce little by little until the sauce becomes thick. 15. Put everything into claypot. Boil it up, then turn off fire. 16. Put coriander on top. Serve.
