⬇️⬇️English recipe follows⬇️⬇️ 干燒伊麪 材料: 伊麪(大)1個 草菇(大)1罐 韭黃2兩 處理: 1. 草菇,清水沖洗乾淨,擎乾水。 2. 韭黃,清水洗乾淨,切2吋一段。 烹調: 1. 大火煲滾1鑊水。 2. 加入伊麪,熄火,弄散麪餅,擎乾水。 3. 大火在鑊內燒熱油半湯匙。 4. 爆香草菇及一半韭黃。 5. 加入清水100毫升及伊麪。 6. 加入調味料: a. 蠔油1茶匙 b. 生抽1茶匙 c. 老抽1茶匙 快速炒勻,可以酌量加入老抽及蠔油,炒勻。 7. 加入糖1茶匙。 8. 加入回鑊油1茶匙。 9. 加入剩餘的韭黃及草菇,炒勻。 10. 完成,上碟,可享用。 Braised E~fu noodles with straw mushrooms Ingredients: E~fu noodles (large) 1 No. Straw mushrooms (large) 1 can Chives 2 taels Preparation: 1. The mushrooms, rinse with tap water. Drain. 2. Chives, rinse with tap water. Cut in lengths with 2". Steps: 1. Heat up a wok of water at high flame. 2. Add in E~fu noodles, turn off fire. Separate the noodles. Drain. 3. Heat up 0.5 tbsp of oil at high flame in wok. 4. Fry mushrooms and half of the chives well. 5. Add in 100ml of water and noodles. 6. Add seasoning: a. Oyster sauce 1 tsp b. Light soya sauce 1 tsp c. Dark soya sauce 1 tsp Fry well fastly. Add in appropriate amount of dark soya sauce and oyster sauce if necessary. Fry well. 7. Add in 1 tsp of sugar. 8. Add in 1 tsp of oil. 9. Add in the remaining chives and mushrooms. Fry well. 10. Complete. Put on plate.
